Recipe for a simple gingerbread cake with pear
Today I invite you to a very simple and quick cake without a mixer. You can prepare gingerbread cake with pears (or other fruits) using only a bowl and a spoon, and in about 10 minutes. With baking, you will have the cake ready in less than an hour. Therefore, you can make it even at the last minute, just before guests arrive. And besides a nice cake, they will also be greeted by the overwhelming scent of baked gingerbread in your home :)

- 225 g wheat flour – all-purpose (- 1.5 cups)
- 2 teaspoons baking powder
- 1 teaspoon gingerbread spice
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 100 g sugar (- you can add less or omit entirely)
- 160 g honey (- half a cup)
- 120 ml oil
- 2 eggs (- size L)
- 1 pear (large – or other fruits)

How to make gingerbread cake with pears
- Mix the dry ingredients in a large bowl.225 g wheat flour – all-purpose, 2 teaspoons baking powder, 1 teaspoon gingerbread spice, 1 teaspoon cinnamon, 1/4 teaspoon salt, 100 g sugar
- In a second bowl, mix the wet ingredients.160 g honey, 120 ml oil, 2 eggs
- Add the wet ingredients to the dry and mix with a spoon.
- Transfer the dough to the prepared pan and spread in an even layer.
- Arrange the sliced fruit on top.1 pear
- Bake at 170 degrees (convection) for approximately 30-40 minutes – until a dry skewer comes out clean.
- After baking, cool the cake.

Pear cake with gingerbread spice – notes
It’s already autumn outside, it’s getting colder, and the weather isn’t spoiling us.
On such days, I love to sit on the couch with a cup of hot tea and a nice aromatic cake. And if I don’t have to work too hard on the cake, that’s pure bliss.
This is my today’s gingerbread cake with pears.
This is a very simple and quick cake that you can prepare even without using a mixer. Thanks to the addition of gingerbread spice and cinnamon, it smells divine, and during baking, this aroma spreads throughout the entire house. Believe me – it’s the best aromatherapy :)

For this cake, I used my homemade gingerbread spice – I still had some left from last year. Every autumn, I make a large jar of gingerbread spice and use it throughout autumn and winter. I add it to gingerbread cakes, as well as pumpkin cakes and, of course, the best gingerbread cookies for Christmas. I also recommend preparing such a homemade spice, because it is much better than those from the store. It is primarily stronger and more aromatic. Store-bought spices very often contain flour and sugar, and there are few actual spices. My spice contains only spices – no flour :) If you haven’t made it yourself yet, be sure to do it this year!

How to make gingerbread cake with pears – tips
As I wrote above – you don’t need a mixer here. Just mix the dry ingredients in a large bowl. Here we have wheat flour, sugar, baking powder, and spices. In a second bowl, mix the wet ingredients – honey, oil, eggs – and add them to the dry ones. Mix everything with a spoon and transfer to a baking pan. Add fruit and bake.

What ingredients are needed to make gingerbread cake?
- sugar – I added sugar (you can use cane sugar or white granulated sugar) and honey to the cake. The cake turned out quite sweet – perhaps even too sweet for me. So if you prefer less sweet cakes, either omit sugar entirely or use less of it. I wouldn’t give up honey here, as it adds a nice flavor to the cake and pairs perfectly with gingerbread spice.
- pears – I used one large pear, which I cut into quarters, removed the core, and then sliced. You can use more fruit, or you can also use other fruits you currently have at home. Apples or plums would also work great here.
- salt – I added a little salt to the cake. Salt in baked goods is an ideal addition because it enhances the flavor of cakes. It’s worth adding it to cakes :)
