If you like mole hill cake, you must try this unusual version with spinach cake, strawberries, and a delicious cream. This cake will delight everyone!

- 200 g spinach (- I used fresh)
- 120 ml buttermilk (- can also be kefir)
- 50 ml oil
- 2 eggs (size L)
- 225 g wheat flour – all-purpose (- 1.5 cups)
- 2 teaspoons baking powder
- 150 g sugar (- 3/4 cup – or to taste)
- 2 tablespoons lemon juice (- optional)

- 200 g strawberries
- 350 ml water (boiling)
- 1 package strawberry jelly
ingredients for mascarpone cream
- 250 g mascarpone cheese (- very cold)
- 250 ml heavy cream (- very cold – mine is 30%)
- approx 50 g powdered sugar (- 1/3 cup – or to taste)

How to make spinach cake for gnome’s mound
- If you have frozen spinach, thaw it beforehand and drain excess water. For fresh spinach leaves, remove the stems (if they are thick and long).200 g spinach
- Blend the spinach with buttermilk, oil, eggs, and lemon juice (if using).120 ml buttermilk, 50 ml oil, 2 eggs, 2 tablespoons lemon juice
- Mix the flour with baking powder and sugar.225 g wheat flour – all-purpose, 2 teaspoons baking powder, 150 g sugar
- Pour the blended spinach into the flour and mix thoroughly.
- Pour the batter into the prepared pan and bake at 170 degrees (fan-assisted) for about 25-30 minutes – until a skewer comes out clean.
- After baking, let the cake cool, then use a sharp knife to cut off the domed top.
- Using a spoon, scoop out part of the center, leaving thicker sides.
- Blend the cut-off cake or crumble it thoroughly into fine crumbs.
How to make strawberries in jelly
- Dissolve the jelly in hot water and set aside to cool.1 package strawberry jelly, 350 ml water
- Wash the strawberries, remove the stems, and cut the fruit into smaller pieces.200 g strawberries
- Add the fruit to the jelly, and when it starts to set, pour it into the hollowed-out spinach cake. The jelly must be setting!
- Chill the cake in the refrigerator until the jelly is completely set.
How to make mascarpone cream for gnome’s mound cake
- Blend the mascarpone cheese with powdered sugar. Pour in the heavy cream and mix until a thick cream forms.250 g mascarpone cheese, approx 50 g powdered sugar , 250 ml heavy cream
- Spread the cream over the jelly with strawberries, forming a dome.
- Sprinkle the top of the cake with crumbs from the cut-off pieces.
- You can serve the cake immediately or store it in the refrigerator.

This cake is a delicious version of the very popular mole hill cake. Mole hill cake is usually a chocolate cake filled with bananas and cream.

Such a spinach cake looks amazing thanks to its unusual color. This is due to the large amount of spinach added to the cake :)

How to make spinach cake for gnome’s mound cake?
To prepare the cake, you will need spinach.
I used fresh spinach and for this cake, I used a large 200g package – although the weight of the detached stems should be subtracted from this weight.
My spinach had long and thick stems, so I detached all of them and blended only the leaves.
If you are using frozen spinach, you need to thaw it beforehand and squeeze out excess water.
The spinach prepared this way needs to be blended well so that there are no pieces of leaves in the cake.
It’s best to do this with a blender or food processor. For the spinach to blend well, blend it with liquid ingredients – buttermilk, oil, and eggs. If you are afraid of the spinach taste, you can also add a little lemon juice.
Then add the well-blended spinach to the dry ingredients – just mix everything with a spoon and you can bake the cake :)
You can bake the cake a day in advance and store it covered with cling film.

How to make cream for gnome’s mound cake?
I wanted to achieve a more stable and thick cream here, so I used equal portions of cold mascarpone cheese and whipping cream. For a 22 cm diameter cake, cream made from 250g of cheese and 250ml of cream is sufficient. For the cream to whip well, both the cheese and the whipping cream must be thoroughly chilled – preferably overnight in the refrigerator.
Apply the cream to the cake, forming a convex dome – like a molehill ;) and finally sprinkle with a layer of blended spinach cake.
You can additionally decorate the gnome’s mound cake with fresh strawberries before serving, but thanks to its unusual green color, the cake looks beautiful on its own :)

How many calories does such a spinach cake with strawberries and mascarpone cream have? In my opinion, it’s quite good – because with the ingredients I used, 100g of cake has about 215 kcal. However, you should know that when dividing the cake into 12 portions – one portion will have about 360 kcal. Which is also not a bad value :)
I didn’t manage to use all of the cut-off cake, so essentially, one portion for me was a bit less caloric. Practically all of the cut-off top was eaten by my daughter. And the crumbs on top are only what I cut from the middle of the cake, and I didn’t even sprinkle all of it on top because it was already falling off.
Regardless of the final calorie count, the spinach gnome’s mound cake is delicious and looks so wonderful that it can easily serve as a birthday cake!
