Today I have for you homemade pampuchy, which are light and fluffy steamed yeast buns. Such sweet buns are a great idea for a sweet dinner or a sweet snack. Serve them with sweetened cream or fruit, and you will surely love them!

If you like pampuchy and usually buy them in a store, you absolutely must try making them yourself at home. Such homemade buns are infinitely better than store-bought ones!

How to make pampuchy at home

  • Crumble the yeast, add a teaspoon of sugar, pour in the milk and stir – cover and set aside in a warm place until the yeast starts to work.
    30 g yeast, 1 teaspoon sugar, 250 ml milk
  • In a mixer bowl, place the flour, sugar, eggs and egg yolks, pour in the yeast mixture and knead the dough.
    500 g wheat flour, 2 eggs , 2 egg yolks, 2 tablespoons sugar
  • During the process, pour in the melted butter and knead until well combined and the dough is smooth.
    50 g butter
  • The dough will be quite loose and sticky, but do not add more flour.
  • Cover the bowl with the dough with a cloth and set aside in a warm place to rise – for about an hour.
  • Prepare a large pot – pour water into it up to about 1/3 of its capacity.
  • On top, place a muslin cloth or folded gauze and tie it tightly with string around the rim of the pot, so that the cloth hangs above the water but does not touch it. Bring the water to a boil.
  • Prepare the first 6 buns – tear off small pieces of dough – mine were about 70 g each – they will be sticky, so you can dust your hands with flour.
  • Make balls and place them on a tray, cover and set aside for about 20 minutes.
  • After this time, carefully arrange 2-3 buns on the cloth, cover with a tight-fitting lid and steam the buns for 10 minutes.
  • In the meantime, prepare 3 more buns and set them aside to rise.
  • Carefully remove the ready buns, place the next ones and prepare another 3 buns for rising.
  • Repeat until all the dough is used.

Homemade Pampuchy, or Steamed Buns – notes

You don’t know this, but it was these very homemade pampuchy that started my love for yeast baked goods :)

In my childhood, my mother didn’t make yeast cakes – I think she was afraid of them.

However, my friend’s mother had no such objections and used yeast. Once I had the pleasure of being there when they were making such pampuchy.

I was fascinated, and these warm, fluffy buns tasted like the best dessert to me.

I convinced my mom and bought yeast so we could make them at home too. Already on the way from the store home, I got into the yeast.

I thought they must taste amazing, since yeast buns are so delicious.

So I tried some fresh yeast… as you can imagine – I spat further than I could see.

Fortunately, this did not discourage me from baking yeast cakes. Now I just don’t try them anymore.

I usually buy pampuchy because I don’t have time. But this time I had both time and willingness, so I prepared them myself.

I also recommend you make them yourself, because they are infinitely better than those from an airtight package.

How to make homemade pampuchy – good advice!

The yeast dough itself is prepared in a traditional way, and there are no surprises here.

However, more attention needs to be paid to “steaming” the buns.

You’ll need a veeery large pot here – I pulled out my huge one – it’s probably about 15 liters – and I still only made 3 buns at a time.

For this, you will need either a cloth diaper or a large piece of gauze – preferably folded in half.

A batch of buns steams for about 10 minutes, and during this time the rest of the buns are rising.

The dough is quite sticky and delicate, so homemade pampuchy shouldn’t rise too much, because then they won’t steam well.

I dealt with this by first preparing 6 pampuchy and covering them with a cloth. In the meantime, I boiled water in the pot.

When I put the first 3 buns in to steam, I prepared the next 3. And so on each time, until all the dough was used.

The buns may stick together during the process; just separate them when they are ready.

How to reheat pampuchy?

What to do if you have pampuchy left over after a meal and they are no longer warm and nice? Well – you need to reheat them.

To avoid doing the whole operation again with a large pot and a cloth diaper, I have a faster and more convenient method.

When I want to reheat just a few pampuchy, I pour some water into a smaller pot, set up a steaming basket, arrange the buns, and steam them for a few minutes.

This way they become warm and very fluffy again!

Definitely try this method.
