The cake is delightful in taste and looks beautiful. Therefore, you can also prepare it for family celebrations. Especially since it’s a cake for a large baking sheet. The Nutty Lady will surely appeal to everyone. I recommend it!

If you like nice creamy no-bake cakes, then you must try this recipe and delight everyone with it!

Nutty Lady Cake Recipe

- 2 packages vanilla pudding (each for half a liter of milk)
- 4 tablespoons sugar
- 100 g butter (softened)

- 500 ml heavy cream (- mine is 30% – well chilled)
- 3 tablespoons powdered sugar (or to taste)
- 2 teaspoons gelatin (slightly heaped + a little cold water)

- approx 40 pieces biscuits (- approximately 300 g)
- about 200 g dulce de leche (from a can)
- about 200 g nuts (- mine are walnuts)
- approx 60 g plum jam (- optional)

How to make pudding cream for Nutty Lady
- Pour almost all the milk into a saucepan and add sugar to it – bring to a boil.500 ml milk, 4 tablespoons sugar
- Mix the pudding powder in the remaining milk.2 packages vanilla pudding
- Pour the milk with pudding into the boiling milk and stir vigorously – cook until it thickens.
- Cover the prepared pudding with a bag or cling film and leave to cool (at room temperature).
- Transfer the softened butter to a bowl and beat on high speed for about 10 minutes – until the butter becomes fluffier and lighter.100 g butter
- Add the pudding spoonful by spoonful to the beaten butter and mix until combined.
How to make whipped cream for the cake
- Pour cold water over the gelatin – just enough to cover it. Set aside for a few minutes to swell.2 teaspoons gelatin
- Whip the heavy cream with powdered sugar until thick.500 ml heavy cream, 3 tablespoons powdered sugar
- Briefly heat the gelatin until it is liquid. Add a tablespoon of whipped cream to it and mix. Pour the gelatin into the rest of the whipped cream and mix thoroughly.
Nutty Lady Cake – Assembly
- Transfer the nuts to a dry pan and briefly heat them to make them more aromatic. Let them cool and chop them.about 200 g nuts
- Line the baking pan with aluminum foil or parchment paper.approx 40 pieces biscuits
- Arrange a layer of biscuits on the bottom.
- Spread the dulce de leche over them and gently smooth it out.about 200 g dulce de leche
- Sprinkle generously with chopped nuts and press them down lightly.
- Add a second layer of biscuits.
- Spread the pudding cream over the biscuits in an even layer.
- Add a third layer of biscuits and spread them with plum jam (if using).approx 60 g plum jam
- Spread the whipped cream and smooth it out.
- Finally, sprinkle the cake with chopped nuts.
- Refrigerate the cake – preferably overnight, so that the biscuits soften from the creams.

No-bake Nutty Lady cake – notes
Today I have a great recipe for a no-bake cake with nuts and custard cream.
I have a feeling that with rising energy prices, such no-bake cakes will become more frequent for me ;)
There must be cake for coffee, so we’ll have to manage, right?
But back to my cake today.
Nutty Lady, as I wrote earlier, is a no-bake cake. It is prepared on several layers of biscuits, which are layered with dulce de leche, custard cream, and whipped cream.
In addition, crispy nuts and slightly tart plum preserves are added.
Here you get a delicious layered cake that looks great and tastes even better.
Despite the dulce de leche, it’s not overly sweet, as I used little sugar for the creams. However, if you have a sweet tooth, use more sugar.

How to make Nutty Lady cake – tips
I suggest starting the cake preparation by making the custard cream, as it needs time to cool down. Once you have the cream ready, or at least the pudding, then you can prepare the cake itself very quickly.

How to make custard cream for Nutty Lady cake?
First, you need to cook the pudding – but with less milk than indicated on the package, so that the pudding is thick. Then you cool it down to room temperature with the top covered (to prevent a hard skin from forming) and finally mix it with soft butter. To prevent the custard cream from curdling, the pudding and butter must be at a similar temperature. You need to thoroughly beat the butter beforehand until it’s fluffy. Then you add the pudding one spoonful at a time and mix until combined.
To make whipped cream, you need to whip heavy cream with powdered sugar. The heavy cream must be very cold, otherwise it won’t whip! I used 30% cream here, but you can also use 36%. To make the whipped cream more stable, I added a little gelatin to it. If you don’t want to use gelatin, you can use a cream stabilizer (check the package for how much to add per 500 ml of cream).

What nuts for Nutty Lady cake?
I used walnuts – I briefly toasted them in a pan beforehand to make them crispier and more aromatic. Instead of walnuts, you can also use hazelnuts. I also recommend toasting them beforehand. After toasting and cooling, chop the nuts with a knife into smaller pieces. I spread some of them on the dulce de leche, and sprinkled the rest on top of the cake.
To give my Nutty Lady cake a more autumnal flavor, I spread one layer of biscuits with plum preserves. Thanks to them, the cake gained a nice flavor, and the tart plum preserves additionally broke through the sweet taste of the creams. Instead of plum preserves, you can also use blackcurrant jam.
The finished cake needs to be refrigerated for a few hours – I recommend leaving it overnight. During this time, the biscuits will slightly absorb the creams and soften. This will make the cake much easier to slice.
