- 200 g butter (soft)
- 150 g powdered sugar (1 cup)
- 2 L eggs (at room temp.)
- 1 teaspoon vanilla extract
- 300 g wheat flour – all-purpose (2 cups)
- 1 teaspoon baking soda
- 0.5 teaspoon baking powder
- 0.5 teaspoon salt
- 220 g oat flakes (2 cups)
- 200 g white chocolate (chopped)
- approx 50 g coconut flakes (optional – 1 cup (not shredded coconut))
- approx 100 g walnuts (chopped – 1 cup)

How to make oatmeal cookies with chocolate step by step
Step 1 – prepare the butter
- Transfer the soft butter to a large bowl, add sugar and vanilla – beat together with a mixer on high speed for a few minutes.200 g butter, 150 g powdered sugar, 1 teaspoon vanilla extract
- Add one egg at a time to the butter and mix briefly after each addition – just until combined.2 L eggs
Step 2 – add dry ingredients
- Sift flour, baking soda, baking powder, and salt through a fine sieve into the butter mixture.300 g wheat flour – all-purpose, 1 teaspoon baking soda, 0.5 teaspoon baking powder, 0.5 teaspoon salt
- Mix briefly with a mixer on low speed – just until combined.
- Add oat flakes to the cookie dough.220 g oat flakes
- Add the add-ins – for me, it’s chopped walnuts and coconut flakes, and chopped white chocolate.200 g white chocolate, approx 50 g coconut flakes, approx 100 g walnuts
- Mix everything with a spoon – the mixture will be thick.
Step 3 – prepare the oatmeal cookies
- Scoop large portions of dough with a spoon – my daughter and I rolled them into balls.
- Arrange the cookies on a large baking sheet lined with parchment paper – leave space between the cookies.
- Lightly flatten each cookie with the palm of your hand.
Step 4 – bake the oatmeal cookies
- Place the baking sheet with cookies into a preheated oven at 170 degrees (fan-assisted) and bake for about 16-18 minutes – until nicely browned.
- Remove the baking sheet from the oven and let cool for about 10 minutes – during this time, the cookies will slightly harden and can be removed from the baking sheet (they are still soft and delicate at first).

Oatmeal cookies with chocolate and nuts – notes
Recently, my daughter and I have been using our vacation time for baking together. This time, we chose these simple and sweet oatmeal cookies baked with white chocolate and walnuts from Martha Stewart’s “Cookies” cookbook. Here, I’m providing a slightly modified version – I reduced the amount of sugar added to the cookies (they’re sweet enough from the white chocolate) and opted for regular powdered sugar, whereas the author uses granulated sugar and brown sugar. We also decided against adding raisins to the cookies, as my children aren’t fond of them. However, our cookies, baked with coconut flakes, chopped walnuts, and plenty of white chocolate, turned out heavenly. Nicely crispy and yet slightly soft in the middle. Be sure to check out this recipe and bake these cookies for your loved ones. What ingredients are essential for baking oatmeal cookies?
To bake these oatmeal cookies, you will need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.
- oat flakes – if you want your oatmeal cookies to be healthy (albo healthier), choose whole grain flakes here – I used mountain oats, instant ones will also be fine, but they are refined and have fewer valuable nutrients
- butter – I used extra butter with 82% fat content; you can optionally choose a butter blend or vegetable butter
- nuts – I baked my cookies with walnuts; however, if you don’t like them or can’t find them anywhere, you can substitute them with hazelnuts, pecans, or even peanuts – if you use salted peanuts, omit adding salt to the dough
- coconut – I used coconut flakes here; if you don’t like coconut, you can omit them; if you don’t have coconut flakes but have regular shredded coconut – use about half a cup of it
- baking soda and baking powder – both baking soda and baking powder are added to the oatmeal cookie dough. If you don’t have baking soda, use a total of 2 teaspoons of baking powder.

What other ingredients can be added to oatmeal cookies?
If you fancy oatmeal cookies with cranberries, add about 1 cup of dried cranberries; you can also add raisins, chopped dried apricots, or dried plums. By adding different dried fruits to oatmeal cookies, you can get a completely new flavor :)

How to store oatmeal cookies with dried fruit?
These oatmeal cookies are best eaten within a few days. To keep them fresh longer and prevent them from hardening, it’s worth transferring them to an airtight container with a lid. Store the cookies on the kitchen counter – not in direct sunlight – and they will be great to eat for a longer period.
You can also freeze these oatmeal cookies for about 3 months :)
