- 100 g sugar (½ cup)
- 100 ml water
- 250 ml milk (1 cup)
- 30 g wheat flour – all-purpose (2 slightly heaped tablespoons)
- 2 pinches cinnamon
- 1 piece peel (cut from a lemon)
- 4 egg yolks ( from size L eggs)

- 1 puff pastry (mine was 375 g)

How to prepare puff pastry for cookies
- If you are using ready-made puff pastry, unroll it and separate it from the paper.1 puff pastry
- Roll the dough tightly again to form a log – about 25 cm long.
- Cut the dough into 12 slices (mine were about 2 cm wide).
- Lightly roll out each slice – to a thickness of about 5 mm.
- Grease a muffin baking pan, or individual molds, with butter and line them with dough slices.
How to make custard cream for Pasteis de Nata cookies
- In a saucepan, heat 100 ml of water and 100 g of sugar together – simmer for a few minutes.100 g sugar, 100 ml water
- In another saucepan, heat about half of the milk together with cinnamon and a piece of lemon peel.250 ml milk, 2 pinches cinnamon, 1 piece peel
- Mix the flour into the rest of the milk.30 g wheat flour – all-purpose
- Add the milk with flour to the boiling milk in the saucepan – cook until the mixture thickens like pudding.
- Remove the pudding from the heat and pour the hot sugar syrup into it in a thin stream – stir with a spoon while doing so.
- Strain the pudding mixture through a sieve into a bowl – to get rid of any lumps and lemon peel.
- In a second bowl, whisk the egg yolks. Add two tablespoons of the pudding to them and mix.4 egg yolks
- Add the rest of the pudding to the prepared egg yolks and mix thoroughly.
- Fill the prepared dough with the cream – about 3/4 of the way up – the cream rises during baking.
- Place the cookies in a very hot oven – I baked them for 20 minutes at 270 degrees (top/bottom mode). If your oven does not have such a high temperature, bake them longer, and towards the end, turn on the top broiler to brown the cream.
- After baking, cool.

What are Pasteis de Nata pastries?
Valentine’s Day is in a few days. For this occasion, I recommend Portuguese Pasteis de Nata pastries, which are Portuguese custard pastries, and of course, Portuguese wine to go with them. Pasteis de Nata, or interchangeably Pasteis de Belem, are famous and very popular pastries in Portugal made from puff pastry baked with custard cream. Seemingly nothing grand or special, but a WOW effect is guaranteed!

How to make Pasteis de Belem – tips
As you might guess, you need puff pastry here. You can prepare the dough yourself – on the blog, you’ll find a step-by-step recipe for puff pastry. If you don’t have time or are afraid to make it, use ready-made (and use the saved time to make yourself look fabulous). For this, you make a very simple custard cream – from homemade custard. Then you bake the pastries at a high temperature – the higher, the better. These pastries originally have slightly burnt tops. We cool the pastries and serve them with a glass of chilled Portada wine.
