Today I have a very nice poppy seed cake in advocaat, which is a light sponge cake with poppy seeds and advocaat cream. Behind this somewhat mysterious name lies a great layered cake consisting of a fluffy sponge cake, a poppy seed layer, and a light custard cream with advocaat. The cake is for a large baking sheet, so it will be perfect for various parties and holidays. I recommend this poppy seed cake with cream for New Year’s Eve.   • 4 egg whites (from size L eggs)
  • 4 egg yolks
  • 100 g sugar (- half a cup)
  • 100 g wheat flour – all-purpose (- 2/3 cup)
  • 2 tablespoons potato starch

  • 200 ml milk (hot)
  • 70 g powdered sugar (- 1/2 cup)
  • 2 eggs (- I used size L)
  • almond extract (- optional)

ingredients for the advocaat pudding cream

  • 500 ml milk (- I used 1.5%)
  • 1 package pudding mix (vanilla or cream flavored – for half a liter of milk (unsweetened))
  • 1 tablespoon wheat flour
  • 4 tablespoons sugar (- 60 g)
  • 200 g butter (softened)
  • 60 ml advocaat (- 1/4 cup)

How to make the sponge cake

  • Beat the egg whites with sugar until fluffy and thick.

  • Meanwhile, sift both flours through a sieve.

  • Line the baking pan with parchment paper and pour in the batter.

  • Bake the sponge cake in an oven preheated to 170 degrees Celsius (fan-assisted) for about 20 minutes – until a wooden skewer comes out clean.
  • After baking, cool the sponge cake and then cut it into two layers.

How to prepare poppy seeds for the cake

  • Pour hot milk over the ground poppy seeds and mix.

  • Add powdered sugar – mix and set aside to cool slightly.

  • Scald the eggs with hot water and add to the poppy seeds – mix with a spoon.

  • You can now add a bit of your favorite extract for flavor – e.g., almond or orange.

How to make the pudding cream

  • Pour off about half a cup of milk, and bring the rest to a boil.

  • In the reserved milk, mix the pudding mix, sugar, and flour.

  • Add the mixture to the milk and stir until a thick pudding forms.
  • Remove the pot from heat, cover the surface of the pudding with plastic wrap, and let it cool to room temperature.

  • Beat the softened butter on high speed until it becomes light and fluffy – I usually beat the butter for about 10 minutes.

  • Add the cooled pudding to the butter, one tablespoon at a time, and mix until combined.

  • Finally, add the advocaat and mix briefly.

  • Place the bottom layer of the sponge cake in the pan and, if you like, moisten it a bit (I moistened it with water lightly sweetened with sugar and a few drops of almond extract).
  • Spread the poppy seed mixture over the sponge cake.

  • Spread about 2/3 of the pudding cream over the poppy seeds.

  • Place the second layer of sponge cake, moisten it, and spread with the reserved cream.

  • Finally, sprinkle the cake with almond flakes.

  • The cake can essentially be served immediately. It can be left out if it’s not too hot.
Uwagi
If you are using whole poppy seeds, pour hot water over them and cook for about 30 minutes. Drain, cool, and then grind twice with a meat grinder. You don’t need to pour hot milk over them anymore.

Christmas poppy seed cake with almonds and advocaat

Poppy seed cake on sponge cake with custard cream – notes

My mother used to make poppy seed cake on sponge cake every Christmas.

It was a sponge cake cut into two layers, with lots of poppy seed filling in between and a little more on top. And on top of that, chocolate glaze – yum.

I haven’t eaten poppy seed cake like that in ages and I absolutely must look for the recipe at my mom’s :)

For now, I have a recipe for sponge cake with poppy seeds and cream with added advocaat (egg liqueur).

The cake turned out delicious and I can recommend it without hesitation.

If you’re worried about the advocaat, don’t be. I only used 1/4 cup for the entire large cake – it just gave a nice flavor to the custard cream, and the amount of “alcohol” was negligible.

The poppy seed cake in advocaat is for a large baking pan – such as 24/24 cm or about 20/30 cm, so you can cut it into many portions.

It will be perfect for a New Year’s Eve party, holidays, or various family occasions.

How to make poppy seed cake on sponge cake with advocaat cream – tips

Start by baking the sponge cake. I baked it with 4 eggs so that I could cut it into two layers. Unfortunately, I cut it a bit unevenly, and the bottom layer was much thicker than the top one. Luckily, it didn’t matter for the taste.

I also lightly soaked my sponge cake with sweetened water with a few drops of almond extract. If children won’t be eating the cake, you can add a little amaretto liqueur instead of the extract.

While the sponge cake is cooling after baking, prepare the custard for the advocaat cream.

I made it from vanilla pudding powder – I used a sugar-free one for 500 ml of milk (my package was 40 g). If you have pudding with sugar, do not add sugar from the recipe, or add less.

Cover the prepared pudding with cling film to prevent a hard skin from forming on top. Cool it to room temperature so you can safely add it to the butter.

How to make custard cream with butter?

The butter for the cream must be soft and at room temperature. Transfer it to a bowl and mix on high speed for about 10 minutes. Then you can start adding the cooled pudding (at room temperature) one spoonful at a time. Finally, add the advocaat and mix only until the ingredients are combined.

What to do if, despite caution, the cream curdles?

In such a situation, I recommend heating some water in a pot, placing the bowl with the cream over the boiling water, and mixing until the cream warms up and becomes smooth again. This usually takes a few minutes.

How to prepare poppy seeds for poppy seed cake?

To make my work easier, I used ground poppy seeds here. Such already ground poppy seeds just need to be poured over with hot milk and left for about fifteen minutes. Then you can add eggs to it. If you don’t have ground poppy seeds, pour whole poppy seeds into a pot and cover them with boiling water. Cook the poppy seeds for about 30 minutes. After cooking, drain them, let them cool slightly, and then grind them twice in a meat grinder.

If you don’t have time, you can ultimately use ready-made poppy seed filling from a can. Spread it on the sponge cake, and then the custard cream with advocaat on top.
