Recipe for pumpkin muffins with chocolate chips
What sweet baked goods are best in autumn? Of course, those with seasonal fruits and vegetables. In autumn, it’s worth adding our native delicious vegetables such as pumpkin, carrots, zucchini, or beets to the dough. Today I invite you to try pumpkin muffins with chocolate. Very simple to make, and delicious. Perfect for both dessert and a second breakfast at school or work. You must try them!
Pumpkin muffins with chocolate – notes
Recently, pumpkins have taken over my kitchen, and I keep buying more and making something with them. Now I’ve prepared pumpkin muffins with chocolate. Both my family and I really love these autumn vegetable baked goods, which smell incredibly of cinnamon.
We like carrot cake, zucchini cakes and, of course, pumpkin cakes.
And these pumpkin muffins also tasted incredibly good to us.
If you like pumpkin, then you absolutely must bake these pumpkin muffins with chocolate! Especially since their preparation is so very simple. Just mix the dry ingredients in one bowl and the wet ingredients in another. Then combine them, add chocolate, and you can bake! If you have pumpkin puree, the whole process, including baking, will take you about half an hour!
If you don’t have ready-made puree, you can make it just as easily. I usually bake the pumpkin, and once it cools, I blend it or mash it thoroughly with a fork. I prefer to use Hokkaido pumpkin here.
How to make pumpkin puree?
I just cut it in half and remove the seeds from the inside. I place it cut-side down on a baking sheet and bake for about 40 minutes at 180 degrees Celsius. Once it cools, I peel it (theoretically you don’t have to peel it, but I prefer to remove it) and blend it. I store the pumpkin puree in an airtight container in the refrigerator – it usually keeps well for a week. You can also freeze it. Prepare such a puree and be sure to bake these pumpkin muffins with chocolate!
