Raspberry Shortcrust Cake with Custard Meringue – Notes
Fruit cakes are always a favorite, so today I have another fresh, light, and fruity cake for you.
I invite you to try this raspberry cake with custard meringue, raspberry jam, and fresh raspberries.
It’s quick and easy to make, and tastes absolutely heavenly :)
How to Make Raspberry Shortcrust Cake?
The first step is making the pastry.
You can prepare the shortcrust pastry ahead of time and chill it in the fridge. If you’re making it the same day, I recommend putting it in the freezer instead. Once chilled, the easiest way to use it is to grate it on the large holes of a box grater.
The rest of the prep takes less than half an hour, and then the cake is ready to go into the oven :D
First, you’ll partially bake the shortcrust pastry, then spread raspberry jam over the top.
Spread the heavenly raspberry custard meringue over the jam.
How to Make Custard Meringue for Cake?
The base of this meringue is a classic egg white meringue. To make it, beat the egg whites with sugar until they become very white, thick, and glossy.
Then reduce the mixer speed and slowly pour in the oil in a thin, steady stream while continuing to mix.
Finally, add the powder from two packages of raspberry custard powder and mix until well combined.
Spread the raspberry meringue over the raspberry jam.
Now all you have to do is arrange the fresh raspberries on top, gently pressing them into the meringue, and grate the remaining shortcrust pastry over everything.
Once baked, the cake looks a little like a Polish-style fruit and meringue crumble cake, but here the meringue layer is more stable and thicker thanks to the oil and custard powder.
If you’ve never tried this shortcrust cake with custard meringue before, you absolutely have to give my recipe a try!
