Recipe for cupcakes with roasted apples and whipped cream
I invite you to try these delicious, wonderfully fluffy, and slightly cinnamon-flavored apple pie cupcakes. I baked these small sweets with roasted apples, and after baking and cooling, I decorated them with whipped cream. You can also serve warm apple cupcakes immediately with a scoop of your favorite ice cream. You must try them!

If you like small sweet cupcakes, then you must make these cupcakes with apples and whipped cream.

- 2 apples (large – mine, chopped without skins and cores, weighed 260 g)
- 3 tablespoons sugar (I used cane sugar)
- 1 tablespoon lemon juice
- 0.5 teaspoon cinnamon
- 2 tablespoons butter
- 2 tablespoons wheat flour – all-purpose (- optional)

- 150 g sugar (- 3/4 cup)
- 2 eggs (size L)
- 190 g wheat flour (- 1 and 1/3 cups)
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 170 g oil (- 3/4 cup)
- 120 ml milk (- I used 1.5%)

- 250 ml heavy cream (- well chilled – I used 30%)
- 2 tablespoons powdered sugar (or to taste)

How to make roasted apples for cupcakes
- Peel the apples, remove the core, and chop the fruit into small cubes.2 apples
- Heat the butter in a saucepan, when it melts add the apples.2 tablespoons butter
- Add sugar, lemon juice, and cinnamon – heat until the apples soften slightly.3 tablespoons sugar, 1 tablespoon lemon juice, 0.5 teaspoon cinnamon
- If the apples have released a lot of juice, add flour at the end and mix. Cool the apples.2 tablespoons wheat flour – all-purpose
How to make cinnamon cupcakes with roasted apples
- Whisk the eggs with sugar until a very fluffy and light mixture is formed.150 g sugar, 2 eggs
- Mix the flour with baking powder and cinnamon.190 g wheat flour, 2 teaspoons baking powder, 1 teaspoon cinnamon
- Add the flour to the egg mixture, alternating with oil.170 g oil
- Add milk and mix briefly.120 ml milk
- Transfer the batter to the prepared cupcake liners – preferably no more than 2/3 full, as the cupcakes will rise a bit.
- Spoon about a slightly heaped teaspoon of roasted apples onto the top of each cupcake.
- Bake the apple pie cupcakes in an oven preheated to 170 degrees (fan-assisted) or 180 degrees (top/bottom heat) for about 20-25 minutes – until a dry skewer comes out clean.
- After baking, you can serve the cupcakes with roasted apples warm with a scoop of ice cream.
- Decorate the cooled cupcakes with whipped cream.
- To make whipped cream, simply whisk cold heavy cream with powdered sugar until thick.250 ml heavy cream, 2 tablespoons powdered sugar

Apple pie cupcakes – notes
I recently craved something sweet with my coffee, and the weekend cake had just run out.
So, I quickly decided on some cupcakes. And since both my daughter and I love all kinds of apple cakes, I baked these cupcakes with roasted apples.
The cupcakes themselves are made quickly, they turn out nicely fluffy and soft, and lightly scented with cinnamon.
You can serve apple cupcakes in two ways – eat them still warm (but slightly cooled) with your favorite ice cream. And those that cool completely, decorate with whipped cream. Delicious taste guaranteed!

Ingredients necessary for making apple pie cupcakes
To make these cupcakes, you don’t need any fancy ingredients. I think you should already have everything at home, and if not, you can easily get them at a local convenience store.
- apples – I used early Polish apples, the best will be hard and juicy ones, so they don’t fall apart into a pulp when frying. You can also use ready-made roasted apples here if you have a jar from last year’s supplies at home.
- sugar – I used brown sugar for the apples here, but you can use regular sugar
- lemon juice – I added a little to the apples to give them a nice color; if you don’t have a lemon, you can add a little “lemon extract” or omit this ingredient entirely
- wheat flour – the most common, can be type 450 or 500
- whipping cream – for whipped cream, I used 30% cream in a carton as usual – liquid, for the cream to whip well, it must be thoroughly chilled in the refrigerator

How to make apple pie cupcakes – tips
I started preparing the cupcakes with the apples, because they need to cool down after roasting. I roasted them in melted butter with sugar, lemon juice, and cinnamon. If you have juicy apples and they produce a lot of juice during heating, add a little flour at the end to thicken the juice.
My cinnamon cupcakes were nicely fluffy thanks to thoroughly mixing the eggs with sugar. I mixed the eggs for several minutes until they became very thick and pale. Then I added the remaining ingredients, but I only mixed everything on low speed and very briefly, so that the mixture wouldn’t lose its fluffiness.
I put the batter into tall cupcake liners (about 5 cm, and then I got 12 cupcakes). If you have shorter liners, you will probably get a few more cupcakes from this recipe.
