- 300 g wheat flour – all-purpose (- 2 cups)
- 2 teaspoons baking powder
- 120 ml buttermilk

How to make a simple cherry cake
- Place eggs and sugar in a mixing bowl. Beat together on high speed until the mixture is very thick and light.3 eggs, 200 g sugar
- Mix the flour with the baking powder.300 g wheat flour – all-purpose, 2 teaspoons baking powder
- Add buttermilk to the beaten eggs and mix briefly.120 ml buttermilk
- Pour in the flour and mix only until combined.
- Line the baking pan with parchment paper and pour in the batter.
- Arrange the pitted cherries on top.approx 200 g cherries
- Bake the cake at 180 degrees (top/bottom heat) for approximately one hour – until a wooden skewer comes out clean.
- After baking, let it cool and sprinkle with powdered sugar before serving.

Simple cherry cake – notes
I recently bought some cherries at the market, washed them, and left them on the counter for snacking.
As it turned out, only I snacked on them, and even then, only occasionally.
I felt sorry for them and thought that since we didn’t feel like eating them, maybe I’d bake a cake.
I didn’t have the time or desire to make anything more advanced, so I opted for simplicity.
I quickly took the ingredients out of the fridge, pitted the cherries, and in a dozen minutes, I prepared a quick cherry cake.
I didn’t have many cherries, so I didn’t feel like rummaging through cabinets for a pitter. That’s why I pitted my cherries with a straw :)

How to pit cherries without a pitter?
Choose a firmer straw and vigorously push it into the cherry to push out the pit from the other side.
Small plastic snack forks – those with two prongs – also worked well for me here. I think they even pushed out the pit better than a straw.

How to make a simple cherry cake – tips
First, I thoroughly mixed the whole eggs with sugar – I mixed until the mixture was very light and thick.
Then I added half a glass of buttermilk – kefir can also be used – and poured in the flour with baking powder.
Once I added the flour, I mixed the batter only briefly.
I poured the batter into a loaf pan (mine was 25 cm long) previously lined with baking paper.
I arranged the pitted cherries on top of the cake and put the cake in the oven.
The cake has a rather dense structure, so only some of the cherries sank into the middle (mostly those in the central part of the pan).
After baking, I cooled the cake and finally sprinkled it with powdered sugar.
If you wish, you can add your favorite flavor to the cake while preparing it. Lemon or almond extract would work great here. I personally really like the combination of cherry and almond flavors.
Instead of cherries, you can also use other fruits. Just cut the larger ones into smaller pieces.

Today, I’d like to invite you to try a super quick and simple cherry cake. Best of all, this cake requires very few ingredients, and you should already have all of them at home. Aside from the cherries—obviously—you will need eggs, sugar, flour, buttermilk, and baking powder.
