  • 1 package puff pastry (- mine was 275 g, about 90 g was left and I baked cookies)
  • 3 eggs (size L)
  • 100 g powdered sugar
  • 1 teaspoon vanilla (vanilla extract can also be used – a few drops)
  • 1 pinch nutmeg (- optional)
  • 240 ml heavy cream (- mine was 30%)
  • 240 ml milk (- mine was 1.5%)

How to make custard tart step by step

  • Grease the mold with butter and sprinkle with flour or breadcrumbs.
  • Unroll the dough and line the mold with it – cut off any excess dough with a knife – if there are any gaps, fill them with scraps.

  • Pre-bake the dough at 180 degrees (top/bottom mode) for 10 minutes.
  • Meanwhile, prepare the cream – blend the eggs with sugar, vanilla, and nutmeg – until slightly fluffy.

  • Pour in the heavy cream while continuously blending.

  • Pour in the milk and blend briefly.

  • Pour the mixture onto the pre-baked crust.

  • Bake at 180 degrees for about 40-45 minutes – until the cream is nicely set.
  • After baking, cool slightly for the cream to set.
  • Before serving, you can sprinkle the top with powdered sugar, decorate with whipped cream or fruit.

Custard Tart – notes

Today I have for you a recipe for an incredibly simple and quick cake that I guarantee will work for everyone! This puff pastry tart is so quick because we use ready-made puff pastry available in stores. I used “fresh” dough. If you have frozen dough, you need to thaw it beforehand.

How to make a custard tart – tips

We start with the tart base – line the bottom and sides of the mold with the ready-made dough. I greased my mold with butter and dusted it with wheat flour beforehand. Cut off any excess dough sticking out beyond the mold with a sharp knife, and if there are any gaps in the dough, use these scraps to patch up the mold. I didn’t use all the dough – I had a 275g package and about 90g of dough was left.

What to do with leftover puff pastry?

To avoid wasting food, it’s worth briefly kneading the dough scraps together to form a uniform dough. Then you can roll it out and cut out cookies with cutters – or cut them into squares or rectangles with a knife. Brush these cookies on top with a little milk and sprinkle with granulated sugar. Bake for about 10 minutes at 200 degrees (top/bottom mode) – this way you’ll get quick cookies that you can eat with coffee or use to decorate the top of your custard tart :)

How to make custard cream?

I called this a custard cream because after baking it resembles custard, but it differs from traditional custards in that it doesn’t contain flour.

To make the cream, you will need large eggs, a little powdered sugar, heavy cream (I used 30% from a carton), and milk. For flavor, I added a little vanilla and a pinch of nutmeg to my cream. If you don’t have nutmeg, you can easily omit it. The custard cream is a combination of whisked eggs with sugar, cream, and milk. The mixture is very liquid and thin – and that’s how it should be! During baking, magic happens, and this liquid turns into a sensational, velvety, and light vanilla cream. Be sure to try this recipe and see for yourself that it’s the simplest tart in the world. And what’s more, this custard tart tastes so perfectly that everyone will think you had to work hard on it :)

How to serve custard tart?

The tart tastes excellent on its own and you can serve it plain. However, if you want to “enhance” its taste and appearance a bit, you can top it with some whipped cream and fresh fruit. It will certainly taste even better that way.
