Prepare with me today an incredibly delicious cake inspired by the famous Italian dessert. It’s a chocolate tiramisu roll cake with coffee and mascarpone cheese cream. Perfectly moist, pleasantly creamy, and incredibly coffee-flavored. For me, this cake tastes brilliant – especially with a cup of delicious coffee. I also highly recommend it for special occasions, because the tiramisu cake looks beautiful and will be a decoration for any dessert table.

  • 4 egg whites (from L-sized eggs)
  • 4 egg yolks
  • 100 g sugar (half a cup)
  • 100 g wheat flour – all-purpose (2/3 cup)
  • 2 tablespoons bitter cocoa
  • 2 teaspoons instant coffee (dissolved in 1/4 cup of water – cooled)

  • 0.5 cup coffee (for me, from 2 teaspoons of instant coffee)
  • 2-3 tablespoons amaretto
  • 2 teaspoons sugar

  • 250 g mascarpone cheese (cold)
  • 250 ml heavy cream (cold – 30% for me)
  • 2 slightly heaped tablespoons powdered sugar
  • bitter cocoa (for dusting)

How to make chocolate-coffee sponge cake for the roll

  • Beat the egg whites with sugar until a thick and fluffy foam forms – like for meringue.
    4 egg whites, 100 g sugar
  • Sift the flour through a sieve together with bitter cocoa.
    100 g wheat flour – all-purpose, 2 tablespoons bitter cocoa
  • Add the egg yolks to the beaten egg whites and gently mix with a spatula.

  • Pour in the flour and add the cooled coffee – gently mix.
    2 teaspoons instant coffee
  • Line the bottom of the baking pan with parchment paper.
  • Pour the batter and spread it evenly.
  • Bake at 180 degrees Celsius (top-bottom mode) for approximately 12 minutes – until a dry stick comes out.
  • While the sponge cake is baking, prepare a clean kitchen towel – lay it on the counter and sprinkle the top with powdered sugar.
  • Trim the edges of the baked sponge cake with a knife, carefully lift it by the parchment paper.
  • Turn it upside down and place it on the towel with powdered sugar. Gently peel off the parchment paper.
  • Tightly roll the sponge cake together with the towel into a log – set aside to cool completely.

How to make mascarpone cream for tiramisu roll

  • Beat the cold cream together with powdered sugar; when it’s thick, start adding cold mascarpone one tablespoon at a time and mix until combined.

Tiramisu roll with coffee – finishing

  • Carefully unroll the sponge cake.
  • Soak the top with coffee and amaretto.
    0.5 cup coffee, 2-3 tablespoons amaretto, 2 teaspoons sugar
  • Spread approximately 2/3 of the cream over the cake, sprinkle the top with bitter cocoa.

  • Roll the sponge cake into a log, wrap it in cling film, and refrigerate for about an hour.
  • After chilling, remove the cake from the refrigerator and unwrap it from the film.
  • Transfer to a plate.
  • Spread the remaining cream over the top of the roll and sprinkle with bitter cocoa.

Chocolate roll cake with coffee and mascarpone cream – notes

Tiramisu roll cake is a simple chocolate-coffee cake inspired by Italian tiramisu.

Theoretically, I should have prepared a white sponge cake for the roll, but it seemed to me that chocolate would fit better here.

So I baked a cocoa sponge cake with added instant coffee.

After cooling, I soaked the cake with sweet coffee with a hint of amaretto liqueur and spread it with a simple cream made from mascarpone cheese and whipped cream.

Finally, I sprinkled the whole thing with bitter cocoa.

Tiramisu roll cake is very simple to make and tastes delicious :)

If you’ve never made a roll cake before, don’t be afraid, it’s not that difficult!

How to make chocolate sponge cake for a roll cake – tips

The most important thing is to roll the cake immediately after baking.

Don’t wait for the cake to cool, because then you won’t be able to roll it – it will crack.

I always bake the sponge cake on baking paper.

After baking, I carefully flip it over with the paper and place the cake on a towel sprinkled with powdered sugar.

I peel off the baking paper and immediately roll up the sponge cake with the towel – along the longer side.

I set aside the rolled cake for about an hour until it cools completely.

The hot-rolled sponge cake will not crack later when you add the cream to it.
