Recipe for spectacular wool roll bread with blueberries
Today I invite you to try the recently popular wool roll bread. And why “wool roll”? The cake resembles a ball of wool in its appearance – hence the name. This cake owes its appearance to its characteristic rolling, so be sure to see how to make such a yeast cake that looks like a ball of wool.

- 80 ml milk (lukewarm – not too hot – 1/3 cup)
- 25 g fresh yeast ( + 1 teaspoon sugar)
- 325 g wheat flour – all-purpose (- 2 cups and 2 heaped tablespoons)
- 2 tablespoons sugar
- 100 g heavy cream (- I used 30% (half a cup))
- 1 egg (size L)

- 100 g blueberries (or other fruits)
- 1 tablespoon sugar
- 1 teaspoon potato starch

How to make wool yeast cake with blueberries
- Crumble the yeast into lukewarm milk, add a teaspoon of sugar and mix together until the yeast dissolves.80 ml milk, 25 g fresh yeast
- Cover the cup with the starter with a cloth and set aside in a warm place for about 20 minutes.
- In the meantime, lightly heat the heavy cream – I heated it for 30 seconds in the microwave.100 g heavy cream
- Pour the flour and the rest of the sugar into a large bowl, add the warm cream and crack in the egg.325 g wheat flour – all-purpose, 2 tablespoons sugar, 1 egg
- Add the yeast starter and knead the dough.
- Cover the bowl with the dough with a cloth and set aside in a warm place for about an hour – to rise.
- Once the dough has risen, take it out onto a floured surface and knead briefly.
- Divide the dough into 6 parts.
- Form each into a ball, then lightly roll out.
- Cut roughly half of the dough disc into thin strips (you can see how I do it in the video).
- On the uncut part, place a tablespoon of blueberries mixed with sugar and potato starch.100 g blueberries, 1 tablespoon sugar, 1 teaspoon potato starch
- Gently roll up the dough disc into a roll, starting from the side with the blueberries.
- Arrange the rolled-up rolls around the perimeter of the baking pan (line the bottom of the pan with baking paper and grease the sides with butter).
- Cover the pan with the buns with cling film or a cloth and set aside to rise for about 40-60 minutes.
- Preheat the oven to 180 degrees Celsius (top/bottom heat mode).
- Lightly brush the top of the risen cake with milk and bake for about 20 minutes – until the cake is nicely browned.
- After baking, let it cool slightly.

Wool roll bread – notes
This wool roll bread took the internet by storm some time ago.
Its name comes from its appearance – after baking, the cake looks like a ball of wool :)
The cake owes this appearance to the delicate cutting of pieces of yeast dough and then rolling them.

How to make wool roll bread – tips
The yeast dough itself is quite standard, although there is one significant change in it.
As a form of “fat”, we add heavy cream to it. Not oil or butter, but heavy cream.
You can fill the pieces of dough with whatever you want.
I used blueberries that I had at home.
Instead of small fruits, you can spread the cake with chocolate cream or jam.
You can sprinkle it with chopped nuts or dried fruits.

Wool roll bread is a very popular yeast cake recently, looking like a ball of wool. How to make such a wool roll bread? Since it's a yeast cake, you obviously need to prepare yeast dough. This particular yeast cake recipe differs from those already available on my blog in that we add heavy cream as fat to the dough. It is less caloric than butter or oil, so the cake is slightly less caloric. I think it also added a nice fluffiness to it. It's definitely worth repeating.
