Today I have for you a recipe for an incredibly simple no-knead yeast cake. Do you like yeast cakes, but have always been afraid to make them? Or maybe you don’t have time for them? If so, then this recipe for a no-knead yeast cake is just for you! And of course, for all lovers of sweet cakes.

  • 25 g yeast (fresh)
  • 100 g sugar (- half a cup)
  • 80 ml milk (lukewarm – 1/4 cup)
  • 120 ml oil
  • 2 eggs (- size L – whisked with a fork)
  • 300 g wheat flour – all-purpose (- 2 cups)

  • 25 g butter
  • 3 tablespoons wheat flour
  • 2 tablespoons sugar

  • approx 100 g blueberries (or other fruits – if using)

How to make no-knead yeast cake

  • Crumble the yeast into the bottom of a large bowl.
    25 g yeast

  • Sprinkle them with sugar and pour lukewarm (not hot) milk over them.

  • Pour in the oil and add the eggs whisked with a fork.

  • Pour in the flour – do not mix anything! – cover the bowl with cling film and set aside in a warm place for at least 2 hours.

  • After two hours, my dough looked like in the picture.

  • Mix the dough with a spoon – you don’t need to use a mixer.

  • Transfer the dough to the prepared pan (mine was greased with butter and floured), arrange fruits on top if using, and sprinkle with crumble topping (just mix butter with flour and sugar until coarser pieces form).

  • Place the pan into a cold! oven, turn it on and set the temperature to 180 degrees (top/bottom heat mode) and bake for approximately 45 minutes – check with a skewer to see if the cake is baked through.
  • Remove the baked cake and let it cool, then take it out of the pan.

Simplest no-knead yeast cake – notes

What’s so special about this yeast cake? Well, you practically don’t have to do anything with it! Add all the ingredients to a bowl – without mixing or kneading. Cover with foil and set aside for a few hours to rise. In the meantime, you can go shopping, run errands in town, or, like me, go for a long walk with your dog. Then, when you return, mix the dough with a spoon and transfer it to a baking pan. The cake can now be baked. Isn’t that simple? With this recipe for no-knead yeast cake, each of you will make a delicious yeast cake without any problems! You don’t have to knead or work it, all pros no cons ;)

How to bake a lazy person’s yeast cake?

This yeast cake is placed in the oven immediately after being put into the baking pan. We don’t wait for it to rise in the pan. Instead, we put it into a cold – yes, yes – cold – oven and only then turn it on and set the temperature. While the oven is heating up, the cake has time to rise slightly. I made my no-knead yeast cake with fresh blueberries – I arranged them on top of the cake – and with a simple crumble topping. The cake tasted sensational and was absolutely perfect with a cup of tea. You can use any other fruit here or you can just make yeast cake with crumble topping. I hope that thanks to this recipe you will bake yeast cakes more often.

P.S. One last small piece of advice regarding yeast dough rising – I recommend placing the bowl with the dough in the oven and setting the heating to about 30 degrees Celsius. In such conditions, the dough rises very quickly and nicely – it’s warm and there are no drafts :)

We layer the ingredients in it, cover the bowl with plastic wrap, and set it aside in a warm place for a few hours. Do not stir or mix the batter at this point! We just let the yeast do its magic and "work its magic." After a few hours—give the dough at least 2 hours in a warm spot—we mix everything together with a spoon, just briefly until the ingredients are combined. Then, transfer the batter into a baking tin, add fruit if you feel like it, top it with crumble, and bake! Simple? You bet it's simple! :)
