The brownie cake itself is one of those very simple and rustic-looking cakes, but it’s by adding chocolate mousse that it gains a lot in both appearance and taste. - 125 g butter
- 30 g dark cocoa (1/3 cup)
- 150 g sugar (3/4 cup)
- 3 eggs (size L)
- 100 g wheat flour – all-purpose (2/3 cup)

- 100 g dark chocolate
- 50 ml heavy cream
- 250 ml heavy cream (well chilled)
- 1 teaspoon gelatin (+ a little water)
- powdered sugar (optional – to taste)

How to make brownie cake
- Melt the butter in a saucepan.125 g butter
- Add sugar to the butter – mix with a spoon.150 g sugar
- Add eggs and mix vigorously.3 eggs
- Add flour with cocoa and mix with a spoon.100 g wheat flour – all-purpose, 30 g dark cocoa
- Pour the batter into a baking pan (greased with butter and floured).
- Bake at 180 degrees (top/bottom heat) for 20-30 minutes – until a dry skewer comes out clean.
- After baking, let it cool – do not remove the cake from the pan.
How to make chocolate mousse for brownie
- Break the chocolate into pieces into a heatproof bowl, add the heavy cream and heat together in a bain-marie (pour water into the bottom of a pot, place the bowl with chocolate on top of the pot and heat over steam until melted).100 g dark chocolate, 50 ml heavy cream
- Set aside the chocolate to cool.
- Whip the cold heavy cream until stiff.250 ml heavy cream
- Dissolve the gelatin in a small amount of cold water – use just enough to cover the gelatin. Set it aside for 5 minutes to swell.1 teaspoon gelatin
- Briefly heat the gelatin (e.g., in a microwave) – do not heat for too long so it doesn’t get too hot.
- Add the chocolate to the whipped cream and mix with a spatula.
- If you prefer sweeter creams, you can sweeten the mousse with powdered sugar – I didn’t add any.powdered sugar
- Add a tablespoon of chocolate cream to the heated gelatin and mix.
- Pour the gelatin into the rest of the cream and mix thoroughly.
- Spread the mousse over the brownie and smooth the surface.
- Refrigerate the cake for several hours.
- Before serving, you can sprinkle the brownie with a little dark cocoa powder and chopped nuts.

Brownie cake with chocolate mousse – tips
I made this brownie with dark chocolate mousse for my husband’s work and the cake received only praise.
That’s why I’m rushing to share the recipe with you :)
I made the cake just before the holidays, but I ran out of time to write the recipe here.
It’s a bit of a shame, because this brownie would be perfect as a chocolate mazurek :)
Here we have a simple chocolate base – made without baking powder (as in brownie) and an extremely delicious and rich chocolate mousse.
For the chocolate mousse itself, I used dark chocolate and didn’t add any sugar.
For some time now, I’ve loved chocolate creams made with dark chocolate, softened only with heavy cream.
Such a mousse is very intense in flavor, but not bitter.
Heavy cream softens the strong flavor, and the mousse gains incredible depth.
If you like dark chocolate, you will also love such a chocolate mousse – be sure to try it!
The holidays are over, but you can make this chocolate cake with chocolate mousse for the weekend.
It will be perfect with coffee :)

How to make brownie with chocolate mousse?
First, prepare the brownie.
I made it entirely in a pot.
First, I melted butter in it, then added the remaining ingredients and mixed with a spoon.
This is probably the simplest and fastest brownie recipe :)
Once the cake was baked and cooled, I prepared the chocolate mousse.
I melted the chocolate for the mousse in a double boiler and then mixed it with whipped heavy cream.
If you prefer sweeter cakes, you can use milk chocolate instead of dark.
Then add a little more gelatin to the mousse – about 1.5 teaspoons.
