Coffee scones with glaze – notes
I found the recipe for espresso scones on Pinterest, and since I’m a coffee lover, I absolutely had to try it. The author makes a large batch, and I made only 8 — my family can’t eat more than that ;) I also slightly adapted the recipe to Polish standards and my own taste. The scones aren’t very sweet, as I only added 1/4 cup of sugar to the dough, so it’s definitely not worth skipping the glaze layer — especially since it tastes amazing thanks to the addition of brewed coffee. Definitely give it a try!

What ingredients are necessary to make coffee cookies?
To make these scones, you will need just a few basic ingredients, easily available in any store. Below I provide a short list of the products I used, as well as possible substitutes.
- coffee – I added 30 ml of cooled espresso to the dough; you can also use instant coffee — about 1 teaspoon per 30 ml of water. In addition to brewed coffee, I also added some chopped coffee beans to enhance the coffee flavor of the scones.
- buttermilk – It should be natural buttermilk; instead of it, you can use kefir or a thinner natural yogurt, or in a pinch, milk. If the dough becomes too sticky after adding milk, add more flour.
- butter – In my case, it’s extra butter with 82% fat content; you can optionally replace it with a mix, or with good-quality plant-based butter.

What can be used to replace coffee in scones?
If you don’t like coffee but still want scones, you can replace the espresso by adding more buttermilk. You can substitute chopped coffee beans with chopped chocolate or chocolate chips. You can use either dark or milk chocolate, depending on how sweet you like your baked goods.

How to store scones?
Scones are best eaten on the first and second day. Those you don’t eat right away should be placed in an airtight container to prevent them from drying out. You can also refresh them by briefly reheating them in the microwave. Scones without glaze can also be cut in half and toasted :)
I hope you enjoy these coffee scones (coffee cookies) and that they’ll be a hit with you and your loved ones, and that you’ll happily use this recipe. I would be extremely happy if you shared your thoughts in the comments under the recipe :)
