Recipe for quick fruit muffins without a mixer
I invite you to try express plum muffins. These fruit muffins are very simple and quick to make, and what’s more, they are muffins without a mixer! You’ll make the muffin batter in one bowl and mix everything with a spoon. Instead of plums, you can use any other fruit, as this is a universal recipe for fruit muffins. - 300 g wheat flour – all-purpose (- 2 cups)
- 100 g sugar (- half a cup)
- 2 teaspoons baking powder (- slightly heaped)
- 1 pinch salt
- 120 ml oil
- 250 ml buttermilk
- 2 eggs (- mine are size L)
- about 250 g plums

How to make plum muffins
- Add flour to a large bowl, then add sugar, baking powder, and salt – mix.300 g wheat flour – all-purpose, 100 g sugar, 2 teaspoons baking powder, 1 pinch salt
- Add oil, buttermilk, and eggs to the flour – mix with a spoon.120 ml oil, 250 ml buttermilk, 2 eggs
- Cut the plums in half, remove the pits, and cut the fruit into larger cubes.about 250 g plums
- Add the plums to the muffin batter and mix with a spoon.
- Spoon the batter into muffin molds – to about 2/3 full.
- Bake at 170 degrees Celsius (fan-assisted) for approximately 20-25 minutes – until a skewer comes out clean.
- After baking, let the muffins cool.

Baked plum muffins – notes
My husband recently went running in the mountains with his friends, so as usual, I wanted to bake him something nice to snack on. This time I opted for simple muffins – without creams and ‘frills’. Instead, they are easy and quick to eat, moist, and not heavy.
I baked them very nice and incredibly simple plum muffins, with delicious sweet plums bought at the market.
The muffins themselves are so simple to make that I’ll be using this recipe more often when I crave something sweet to eat :)

How to make quick fruit muffins – tips
If you’re looking for an express muffin recipe, this is the recipe for you!
Muffins without a mixer, made in one bowl and mixed only with a spoon.
Plus, only basic ingredients.
To prepare these plum muffins, you will need flour, sugar, eggs, oil, and buttermilk. Instead of buttermilk, you can also use natural yogurt (preferably one with a thinner consistency) or kefir.
I added about 250 g of chopped plums to the muffin batter. If you don’t have these fruits, all is not lost – you can use any other fruit. Chop larger ones into bigger cubes first, and then add them to the muffins.
Transfer the muffin batter to a muffin baking pan – I got 16 muffins. It’s best to fill the batter to about 2/3 of the height, as the muffins rise quite a lot and otherwise might overflow. I baked the plum muffins at 170 degrees Celsius with convection, but you can also bake them in top/bottom heat mode at 180 degrees Celsius.
You can store express plum muffins in an airtight container for several days. They will then retain their moisture longer and be better to eat.
