- 150 g sugar (- 3/4 cup)
- 150 g wheat flour (all-purpose – 1 cup)
- 50 g almonds (ground – about 1/2 cup)
- 2 teaspoon baking powder
- 60 ml oil (- 1/4 cup)
- ok 80 ml milk (- 1/3 cup)

How to make fluffy almond cupcakes
- Prepare a muffin tin – line it with paper liners, or grease it with butter and sprinkle with flour.
- Whisk eggs with sugar until thick and very fluffy.3 eggs, 150 g sugar
- Meanwhile, combine flour, ground almonds, and baking powder in a bowl.150 g wheat flour, 50 g almonds, 2 teaspoon baking powder
- Add oil to the beaten eggs and mix briefly.60 ml oil
- Add about half of the flour and mix on low speed.
- Add the rest of the flour and mix briefly.
- Pour in the milk and mix.ok 80 ml milk
- Spoon the batter into the cupcake liners – up to a maximum of 2/3 full.
- Bake at 180 degrees (top/bottom heat) for approximately 20-25 minutes – until a wooden skewer comes out clean.
- After baking, cool the cupcakes.
- You can decorate them in any way you like – even just sprinkling with powdered sugar is enough. You can drizzle them with melted chocolate or decorate with cream as I did.

Today I invite you to try fluffy almond cupcakes.
Very fluffy, light, and delicious!
These cupcakes with ground almonds taste excellent both with cream and on their own.
My daughter even preferred the ones without cream and ate three such large cupcakes “to start the day”.

How to make almond cupcakes- tips
You will need basic ingredients that you surely have at home. The only thing you need to take care of is ground almonds.
You can buy them already ground, or grind them yourself at home. I had ground almonds with skin, so my cupcakes had brown specks in the batter. If you use blanched almonds, the cupcake batter will be nicely light and uniform in color.

What to do to make cupcakes fluffy?
You need to beat the eggs with sugar well. Beat them until the mixture lightens in color, becomes thick and very fluffy. Then add the ingredients and mix only briefly and on low speed, so that the batter does not lose its fluffiness.
The cupcakes rise a lot, so don’t put too much batter into the cupcake liners.
Here I used tall cupcake liners (about 5 cm high), which is why I got larger and taller cupcakes (of course, I also got fewer of them, 8 pieces). If you use traditional shorter cupcake liners (about 3 cm high), you should get 12 cupcakes, or 1-2 more.

How to decorate almond cupcakes?
After baking, you can decorate almond cupcakes as you like. I used cream frosting that was left over from preparing a cake. You can also drizzle the cupcakes with chocolate glaze or sprinkle them with powdered sugar. It’s all a matter of your taste :)
