How to make gingerbread house dough

  • In a pot, dissolve butter, sugar, honey, and gingerbread spice together – mix thoroughly.
    60 g sugar, 60 g honey, 80 g butter, 2 teaspoons gingerbread spice
  • Set aside the prepared mixture to cool.
  • Add the sifted flour and baking soda to the mixture – blend until combined.
    200 g wheat flour, 0.5 teaspoon baking soda
  • Chill the dough overnight in the refrigerator (you can chill it longer – even a month :D).
  • Cut off roughly half of the dough, knead it lightly to warm it with your hands, then roll it out thinly on a floured surface.
  • Cut out the walls from the house template, place them on the rolled-out dough, and cut out the shapes with a sharp knife (or preferably a pastry wheel).
  • You can cut out the opening in the front wall with a round cookie cutter or a small shot glass.
  • From the remaining dough, cut out small Christmas trees, stars (which can be glued to the roof), and gingerbread men. Also cut out small rectangles to which you will glue the trees so they stand.
  • Place all the gingerbread pieces on a large baking sheet lined with parchment paper – keep some space between them, as the gingerbread will rise slightly.
  • Bake at 180 degrees Celsius for about 12 minutes.
  • Immediately after baking, the gingerbread pieces will be soft, so do not move them. If any have stuck together, gently separate them now.
  • You can gently level (grate) the cooled and hardened house walls with a fine-mesh grater – this will make them stick better.

How to make icing to assemble the gingerbread house

  • Sift the powdered sugar through a sieve to avoid lumps.
    about 250-300 g powdered sugar
  • Lightly blend the egg white – just until it’s foamy.

  • Add about 250 g of sugar and blend.
  • Add lemon juice.
    1-2 tablespoons lemon juice
  • Set aside roughly half of the icing in a piping bag.
  • To the rest, add the remaining powdered sugar and blend – the icing should be thick – if necessary, add a little more sugar.
  • Also transfer it to a piping bag, in which you cut off one corner – just don’t make too big a hole :)

How to make a gingerbread house

  • Place the back wall of the house on the countertop.
  • Squeeze some thick icing onto the shorter sides and attach the walls – support them with cups or jars so they don’t fall.
  • Spread icing on the top edge of the walls and carefully attach the front wall.
  • Leave it for a while to dry thoroughly (below are photos of my house during the gluing phase).
  • Only then can you gently attach the roof (you can place low bowls under its sloped part to prevent the roof from sliding off).
  • Once the roof is well attached, you can start decorating.
  • Use the previously set aside looser icing for this – make a small hole in the piping bag.
  • Attach the Christmas trees to their bases with the thicker icing.
  • Also make the icicles on the roof with the thicker icing.
  • Attach the finished house with thick icing to a plate or a sturdy cardboard base.
  • Attach small Christmas trees around the house.
  • Finally, sprinkle the whole thing with powdered sugar.

Christmas Gingerbread House – notes

Finally, a gingerbread house – it appeared at my place too. Until now, I thought it was too difficult to make. Especially after a failed attempt last year. This time, I made much thicker icing for gluing and got to work on the house. If you follow me on Facebook, you probably saw the adventure I had with it. If not, I’ll just say briefly that I finally made this gingerbread house and decorated it with “pains and struggles”. In the meantime, it turned out that I had to go pick up my daughter from school.

When I returned, the house was gone ….

It turned out that my dog ate the house and the additional gingerbread Christmas trees ……………

I didn’t even manage to take a picture of it.

When I cooled down, I started preparing a second house. I guarded this one better, and it wasn’t eaten ;) Although my daughter walked around the next day asking if she could get to it yet :D

To prepare the gingerbread walls, I used my recipe for Christmas gingerbread cookies – from the rest of the dough, I baked gingerbread for the holidays :)

Gingerbread House Recipe

You can place the house on the Christmas table, or use it as a home decoration. You can make the icing in different colors and decorate the gingerbread house in a multicolored way :)
