How to make a sponge omelet step by step
- In one bowl, place the egg yolk, milk, flour, and vanilla sugar.25 g wheat flour, 40 ml milk, 1 teaspoon vanilla sugar, 1 egg yolk
- In the second bowl, whisk the egg white until fluffy.1 egg white
- Mix the ingredients from the second bowl.
- Add the egg white to the batter and gently mix.
- Grease the baking dish with butter, pour in the batter.butter
- Bake at 200 degrees (top-bottom mode) for about 20 minutes – until a dry stick comes out.
- Eat warm.
- If you are frying the omelet, grease a non-stick pan with a little oil.
- Pour in the batter, cover the pan with a lid, and reduce the heat.
- Fry for about 5 minutes, then carefully flip the omelet to the other side and fry until set.

Fluffy omelette like a sponge cake – notes
I’ve been making this sponge omelette at home for a while now, quite often, because my daughter loves it.
Why am I only sharing the recipe now – I don’t know – but better late than never. And this omelette is a marvel! It always turns out super fluffy and is also filling.

What ingredients are needed to make a sponge omelette?
For the omelette, you only need basic ingredients that you surely have at home, and if not, you can easily buy them in any store. I always use these products here:
- eggs – preferably size L
- wheat flour – I usually use cake flour type 450 here
- milk – mine is 1.5%, but it can be replaced with plant-based milk, or other milk
- vanilla sugar
Depending on the number of eggs, you adjust the amount of other ingredients. A portion from one egg is enough for me. If I make it with two eggs, my daughter can’t eat it :)

How to prepare a sponge omelette – tips
For the omelette to be light as a feather and super fluffy, you must first separate the yolks from the whites. I immediately add the measured amount of flour and milk to the yolks, and add vanilla sugar. In a second bowl, I whisk the egg whites into a very thick and fluffy mixture. Then I mix the yolks with the remaining ingredients. I add the egg white foam to the batter and gently mix it so that the batter retains its fluffiness. The omelette batter prepared in this way can now be fried.
When I have more time, I bake the omelette in the oven, then it’s even fluffier and only slightly deflates.
If I’m in a hurry, I fry this sponge omelette in a hot pan lightly greased with oil or melted butter. I fry the omelette over low heat, covered, and during cooking, I carefully flip it to the other side and fry it for a little longer. Unfortunately, when prepared this way, it deflates more when flipped and is not as fluffy as when baked in the oven. But it is still fluffier than traditional pancakes and omelettes.
The recipe is very easy to multiply – I provide everything for one egg, if we increase the number of eggs, we increase the amount of other ingredients. For two people to get full, in my opinion, a portion with 3 eggs is enough – but that depends on “gluttony” :D
