Strawberry buns recipe step by step
If you like delicious sweet homemade yeast buns, then this year bake these tasty yeast buns with strawberries and streusel.

- 25 g yeast (fresh)
- 1 teaspoon sugar (for yeast)
- 150 ml milk ((less than 2/3 cup))
- 70 g sugar ((1/3 cup))
- 300 g wheat flour (all-purpose (2 cups) + a little for dusting)
- 60 g butter (melted and cooled)
- 3 egg yolks (- I used L-sized eggs)
- 300 g strawberries (finely chopped)

- 1 egg (beaten)

How to make yeast buns with strawberries and crumble topping
- Heat the milk briefly – just enough for it to be lukewarm.150 ml milk
- Add crumbled yeast and a teaspoon of sugar to it – mix thoroughly.25 g yeast, 1 teaspoon sugar
- Cover the yeast starter and set aside in a warm place for about 15-20 minutes – until it rises and thickens.
- In a mixer bowl, cream the egg yolks with the remaining sugar – until a light, thick mousse forms.3 egg yolks, 70 g sugar
- Sift the flour into the beaten egg yolks, add the melted butter and the yeast starter.300 g wheat flour, 60 g butter
- Knead the dough – do not add more flour – the dough will be slightly sticky.
- Cover the bowl with the dough with a towel and set aside in a warm place for about 1-1.5 hours to rise.
- Once the dough has doubled in size, transfer it to a floured surface and knead briefly.
- Form the dough into a ball, cut it into quarters with a sharp knife.
- Cut each quarter into 3 portions.
- With floured hands, form the pieces of dough into flat discs, place about 2 tablespoons of strawberries in the center of each, and seal the dough thoroughly.300 g strawberries
- Arrange the buns on a baking sheet, seam-side down – leave space between the buns.
- Cover the buns with a towel and set aside to rise for about 30 minutes.
- Meanwhile, preheat the oven to 180 degrees Celsius – top/bottom mode.
- Brush the risen buns with beaten egg and sprinkle with crumble topping.1 egg
- Combine the crumble ingredients in a bowl – just rub the butter with sugar and flour with your fingers.50 g sugar, 20 g butter, 50 g flour
- Bake the buns for about 15 minutes – until golden.
- After baking, cool slightly and enjoy while still warm :D

Yeast buns with strawberries – notes
In the summer season, my desire for light yeast buns with fruit increases.
Blueberries and blueberry buns become the obvious choice here :D
There are no blueberries yet, so I baked myself strawberry buns, i.e., buns with strawberries and streusel.
As a base, I used Magda’s recipe for blueberry buns from Culinary Criticism (I only made them with a smaller portion).
She prepares yeast dough completely differently than I do, so I wanted to check her method :)

How to make yeast buns with strawberries – tips
Yeast starter is prepared in a traditional way.
Yeast should be dissolved in warm milk, a little sugar added, and set aside in a warm place until it starts to work.
Meanwhile, egg yolks should be beaten with sugar – until they are thick and pale.
Sift flour into the prepared egg yolks and add melted and cooled butter. Add the yeast starter and knead the dough.
Overall, I’ll say this – I made the dough according to the recipe and I don’t see much difference in the dough :) In its fluffiness and lightness.
The amount of flour added has the biggest impact on the dough – the more flour added (from the original weight in the recipe), the harder and heavier the buns will be.
This dough comes out slightly sticky, but don’t be tempted to add much more flour. Use only a little – just enough to dust your hands.
Then the buns will turn out light, fluffy, and melt-in-your-mouth.
Once you have risen yeast dough, divide it into portions, flatten each into a disc, and add strawberries.
I finely chopped my strawberries and spooned them on. But if you like, you can just cut the larger fruits in half and use the smaller ones whole.
After placing the strawberries in the center of the dough, seal it thoroughly and arrange the buns on a baking sheet lined with parchment paper.
Cover the prepared buns and set them aside for about half an hour to rise and puff up.
Just before baking, sprinkle the yeast buns with strawberries with streusel and put them in the oven.

How to make streusel for yeast buns?
Below the photos, you’ll find my streusel recipe, but in short – streusel is butter usually mixed with wheat flour and sugar. We crumble them together with our fingers until they form clumpy pieces. Then we sprinkle the streusel over the cake or buns.
