  • 30 g potato flour (- 2 heaped tablespoons)

How to make sponge cake for the cake

  • Add sugar to the egg whites and beat on high speed until they thicken significantly – they will be white and shiny.

  • Meanwhile, sift the wheat flour and potato flour together through a sieve.

  • Add the egg yolks to the beaten egg whites and gently mix.

  • Add the flour and gently mix.

  • Line the bottom of the baking pan with parchment paper – leave the sides without paper and do not grease them with butter.
  • Pour the sponge cake batter into the pan and level it.
  • Bake at 170 degrees (fan-assisted) for about 25-30 minutes – until a dry skewer comes out clean.
  • After baking, cool the sponge cake, then cut it into two layers.

How to make mascarpone cream with strawberries for the cake

  • Transfer the strawberries to a pot, add sugar and about 1/4 cup of water.

  • Cook the strawberries until they soften and release a lot of juice.
  • Cover the gelatin with cold water and set aside for a few minutes to swell.

  • Add it to the hot strawberries and mix thoroughly.
  • Transfer the mascarpone cheese to a bowl and mix briefly.

How to make strawberry temptation cake with jelly

  • Place the bottom layer of the sponge cake on a flat plate and secure the baking pan ring around it.
  • If you like, you can lightly moisten the sponge cake (I moistened it with water, sugar, and lemon juice).
  • Spread the strawberry cream in an even layer.

  • Cover with the second cake layer (I also moistened this one on top).

  • Refrigerate the cake to chill and set.
  • Meanwhile, prepare the jelly – make it according to the package instructions and set it aside to slightly set.

  • Place sliced strawberries on the sponge cake and carefully pour the setting jelly over them.

Strawberry cake with mascarpone and jelly – notes

Today’s strawberry temptation cake is a bit like a no-bake strawberry cheesecake.

Cheesecake, because the strawberry mass is largely mascarpone cheese :)

The strawberry cake itself is simple to make, although like all no-bake cakes, it requires some chilling time.

How to make no-bake strawberry cheesecake with jelly – tips

First, bake a white sponge cake – you can make your favorite one – one that can be cut into two layers, or use my sponge cake recipe. You will find it described step by step under the photos.

You can bake the sponge cake for the no-bake cake in advance – even 2-3 days earlier. Then wrap it in foil and store it. Anyway, I prefer to bake the sponge cake earlier, because after resting, it’s much easier to cut. A freshly baked sponge cake is harder to cut and less evenly.

Once you have the sponge cake, then prepare the strawberry cream with mascarpone cheese.

I used fresh strawberries for my cream, but out of season you can use frozen ones.

I simmered the strawberries with sugar until they softened and released their juice. Then I added gelatin to them and mixed thoroughly.

I mixed the strawberries with mascarpone cheese – I didn’t wait for the fruit to cool down – I added them while still hot.

Mascarpone cheesecake with strawberries is best prepared in the same pan in which the sponge cake was baked. Then you will be sure that the mixture won’t escape anywhere :)

I prefer more moist cakes, so I lightly soaked the sponge cake layers before pouring the strawberry cream.

I used water mixed with sugar and lemon juice (a glass of water, two teaspoons of sugar, and a teaspoon of lemon juice), you can also use lightly sweetened tea.

We put the cake with strawberry cream in the fridge for the cream to set and prepare the jelly.

We make it according to the recipe on the package and set it aside to cool and slightly thicken.

If I want the jelly to set faster, I pour about 200 ml of hot water over it, mix thoroughly, and add 300 ml of cold water. This shortens the setting time of the jelly.

Remember not to pour very liquid jelly onto the cake, as it may run down!

The strawberry temptation cake is ready when the jelly on top sets :)

Cheesecake with strawberries is best cut with a slightly warmed knife – just hold it under hot tap water for a moment.

If you don’t feel like or don’t have time to bake a sponge cake, use ladyfingers – arrange them at the bottom of the mold, spread strawberry cream over them, and then add a second layer of ladyfingers :)
