Simple yeast cake with crumble topping will taste perfect with a cup of hot tea or coffee. How to make a tall yeast cake with crumble step by step

  • Crumble the yeast, add a teaspoon of sugar, and pour in lukewarm (not hot) milk – mix thoroughly, cover, and set aside in a warm place for about 20 minutes.
    25 g fresh yeast, 1 teaspoon sugar, 200 ml milk
  • In a mixer bowl, place flour and sugar, add lightly beaten egg yolks and egg.
    500 g wheat flour – all-purpose, 2 egg yolks, 1 egg, 100 g sugar
  • Pour in the risen yeast starter and begin kneading the dough.
  • During kneading, pour in the melted and cooled butter – knead until the dough comes away from the sides of the bowl.
    80 g butter
  • Cover the bowl with the dough with a cloth and set aside in a warm place for about an hour – until it rises.
  • Take the risen dough out onto a work surface and knead briefly.
  • Line the baking pan with parchment paper and transfer the dough into it.
  • Cover with a cloth and set aside for about 20 minutes – for a slight puffing.
  • Meanwhile, prepare the crumble – transfer the ingredients to a bowl and crumble with your fingers.
    50 g butter, 60 g wheat flour – all-purpose, 45 g sugar
  • Brush the risen dough with warm milk and sprinkle with crumble.
    2 tablespoons milk
  • Bake for about 45 minutes in an oven preheated to 170 degrees Celsius (convection mode).
  • After baking, cool.

Yeast cake with crumble topping – notes

This tall buttery yeast cake caught my eye on Tysia’s Instagram from Tysia Gotuje and I baked it the very next day :) I love yeast cakes, and I hadn’t baked any for a while, so I couldn’t resist. As you can see, the cake turned out super tall and fluffy, and it had a lot of crumble topping. Everything just as I like it! That’s why I highly recommend this delicious cake to you too! You must try it!

How to make a fluffy yeast cake – tips

Prepare yeast – I use fresh, but if you have dried, use half the amount specified in the recipe. In addition, egg yolks and an egg, milk, butter, and of course flour. A lot of melted butter goes into the dough – it adds moisture to the cake and, of course, a lot of flavor. I didn’t add any fruits or jams to my buttery yeast cake. They weigh down the dough and then it doesn’t rise as much.

If you like, add jam or preserves while eating – such a yeast cake with jam will not only make a great dessert but also work as an idea for a sweet breakfast :)

After kneading the yeast dough, set it aside to rise, and when it doubles in volume, knead it briefly and place it in a baking pan. Again, leave the dough to rise slightly and only then sprinkle it with crumble topping.

How long to bake yeast cake?

My buttery yeast cake baked for 45 minutes with convection at 170 degrees Celsius. It’s known that ovens can bake very differently, and you know your ovens best. Therefore, towards the end of the baking time, check if the cake is ready. Bake the yeast cake until it’s nicely browned and well-risen, and the dough is springy when lightly pressed. Then you can take it out of the oven and set it aside to cool. But you don’t have to wait for the yeast cake to cool completely, oh no :)

I ate it while it was still warm – it tasted perfect with a cup of coffee and a little jam :)

Like all yeast cakes, this one is also best on the day it’s baked.

If you have any left for the next day, you can briefly warm it in the microwave – it will be soft and fluffy again.

Can you make yeast cake with apples?

You can bake this yeast cake with apples, but I recommend slicing them into thinner half-slices, arranging the fruit on the dough before it rises – don’t add too many apples so as not to weigh down the dough too much. Bake the yeast cake with apples as I described in the recipe. You can also make an apple yeast cake – it’s not as beautifully tall as this tall yeast cake, but it’s just as tasty :)
