Recipe for a light and fluffy cheesecake with powdered milk
Today I invite you to try the perfect fluffy cheesecake with powdered milk. This cheesecake is baked without a crust, and I served it only lightly dusted with powdered sugar and fruits. The cheesecake itself is so delicious that it doesn’t need any other additions. Be sure to try this proven recipe for cheesecake from a bucket with powdered milk!

If you like cheesecakes, then you absolutely must make this super fluffy and light cheesecake made with powdered milk.

- 6 egg whites (from size L eggs)
- 6 egg yolks
- 200 g sugar (- 1 cup)
- 1 kg quark cheese (for cheesecakes – full-fat – I recommend Piątnica)
- 1 tablespoon vanilla sugar
- 2 packages pudding (vanilla, 40 g each – we use powder)
- 180 ml oil
- 360 ml milk (I used 1.5%)
- 120 g powdered milk (full-fat (must not be granulated), 1.5 cups)

How to make cheesecake with powdered milk
- Put water in a kettle to boil for a water bath.
- Preheat the oven to 150 degrees Celsius (top/bottom heat mode).
- Transfer the egg yolks to a large bowl, add sugar and vanilla sugar, and mix until the mixture is white and very thick.200 g sugar, 1 tablespoon vanilla sugar, 6 egg yolks
- Add quark cheese to the egg yolks – in portions and mix well.1 kg quark cheese
- Add the pudding powders, pour in the oil and milk – mix until combined – the mixture will be thin.2 packages pudding
- Pour in the powdered milk and mix thoroughly.
- Whisk the egg whites with a pinch of salt until they are white and very thick.6 egg whites
- Add the egg whites to the quark mixture and gently mix with a spoon.
- Line a baking pan approximately 20/30 cm in size with baking paper.
- Wrap the pan from the outside with several layers of aluminum foil.
- Pour the cheesecake mixture into the pan and place it in a second, larger pan (I placed it on a deep baking sheet from the oven)
- Carefully pour hot water into the larger baking sheet.
- Bake the cheesecake for about 1.5 hours.
- After this time, turn off the oven and leave the cheesecake inside.
- Remove the pan from the water bath.
- Store the cake in the refrigerator to chill – I like to leave it overnight.
- Before serving, sprinkle the cheesecake with powdered sugar, or drizzle with chocolate glaze.

Cheesecake with powdered milk – notes
Finally, cheesecake with powdered milk has joined my quite extensive collection of cheesecakes.
I had been planning to bake it for a long time and finally had the time :)
I baked it without a crust, and I only dusted the top with powdered sugar and decorated it with fruit.

What ingredients will be needed to bake a cheesecake with powdered milk?
First – quark cheese.
It must be good, full-fat quark cheese – I used ready-made in a bucket (Piątnica brand).
The quark cheese must be full-fat, because we add a lot of liquids to the cheesecake mixture – oil and regular milk. If you use loose and wet cheese, the cheesecake might not turn out well. It can be cheesecake from a bucket – but of very good quality!
Second – powdered milk.
Full-fat and loose. You cannot use granulated milk!
Third – pudding powder.
It can be vanilla or cream-flavored for half a liter of milk – you will need two packages.
Besides that, eggs – which we separate into yolks and whites, milk, oil, and sugar.
Mix the ingredients together.
After adding milk and oil, the cheesecake mixture will be very runny.
Whip the egg whites separately and add them in two portions to the quark mixture, gently mixing with a spoon or whisk.
Pour the mixture into a baking pan lined with baking paper and bake in a water bath.

How to bake a cheesecake in a water bath?
Wrap the baking pan from the outside with several layers of aluminum foil (if the pan is not springform and is sealed, you don’t need to do this).
Boil water in a kettle.
Place the cheesecake pan into a larger pan (I put it on the large baking sheet included with the oven) and carefully pour in hot water.
Place the whole thing in the oven and bake.
After baking, leave the cheesecake from a bucket with powdered milk in the oven until it cools down, then put it in the refrigerator.
After cooling, you can drizzle the top of the cheesecake with melted chocolate, or like me, simply dust it with powdered sugar.
The cheesecake turns out very delicate and fluffy (in the photos you can even see that the top part is fluffier), and it has few calories!

The recipe for cheesecake with powdered milk guarantees us a light and fluffy cheesecake. The cheesecake prepared according to this recipe is delicate like a cloud. I myself really like the taste of powdered milk - I've had it since childhood. Back then, I used to eat my mom's milk with spoons.
The cheesecake with powdered milk is quite liquid after preparation - this is due to the added regular milk. Therefore, make sure your mold is sealed. After baking and cooling, you can pour icing over the cheesecake.
How to make icing? The simplest icing you can make consists of just two ingredients. Pour powdered sugar (about 2 cups) into a bowl and gradually add a little milk (or lemon juice if you want flavored icing). Mix the sugar with milk until a slightly runny icing forms. Now all you have to do is pour the icing over the cheesecake with powdered milk.
Fluffy cheesecake recipe
For this recipe, you need full-fat powdered milk. And it must be "powdered" milk, not granulated! Granulated milk will not dissolve in the cheese and you will have lumps of it in the cake. Such a cheesecake will not be very good. You can additionally sift the powdered milk through a sieve if you want to get rid of any lumps.
