- 4 egg yolks (from size L eggs)
- 150 g sugar (- 3/4 cup)
- 200 g wheat flour – all-purpose (- 1 and 1/3 cups)
- 2 teaspoons baking powder
- 200 ml Greek yogurt (at room temperature)
- 100 g butter (melted and cooled)
- extract (I used vanilla)

How to make egg yolk muffins step by step
- Beat the egg yolks with sugar on high speed until they become light and very thick – you can add a little extract.4 egg yolks, 150 g sugar, extract
- Sift the flour through a sieve together with the baking powder.200 g wheat flour – all-purpose, 2 teaspoons baking powder
- Add Greek yogurt (or thick natural yogurt) to the beaten egg yolks and mix briefly.200 ml Greek yogurt
- Pour in half of the flour and mix briefly.
- Pour in the butter and mix, then finally add the rest of the flour – mix briefly.100 g butter
- Transfer the batter to muffin molds.
- Bake at 180 degrees Celsius (top/bottom heat mode) for about 25 minutes – until a dry skewer comes out clean.
- After baking, let cool.

Cupcakes made only from egg yolks – notes
The children again persuaded me to bake meringue and again I was left with egg yolks, not knowing what to do with them. In summer, it’s less of a problem, because I would probably make ice cream from them, but in winter it’s a bit worse. I did some searching and found a recipe for these simple egg yolk cupcakes.

How to make egg yolk cupcakes – tips
The egg yolks need to be thoroughly whisked with sugar – until they are almost white and thick. Just like for kogel mogel. Only then do we add sifted flour and melted butter. Thanks to the strong aeration of the egg yolks, the cupcakes turn out very fluffy and soft. I added a little vanilla extract to my cupcakes, but you can use your favorite – lemon or almond would fit perfectly. If you have more egg yolks, make a double batch of the batter and instead of cupcakes, bake an egg yolk cake in a loaf pan (then extend the baking time), or in a rectangular pan. If you feel like it, you can also add small fruits to these egg yolk cupcakes.
