- 190 g wheat flour – all-purpose (1 and 1/4 cups)
- 100 g sugar (1/2 cup, can be regular or cane)
- 2 teaspoons baking powder
- 1.5 teaspoons gingerbread spice
- 120 ml rapeseed oil
- 100 g honey (approx 1/3 cup)
- 2 eggs (size L)

- 150 g white chocolate
- 100 ml heavy cream (I used 30%)
- 0.5 teaspoon cinnamon
- 0.5 teaspoon powdered gelatin (+ a little cold water)
- 250 g mascarpone cheese (cold)

How to make gingerbread cupcakes with cinnamon cream
Step 1 – preliminary cream preparation
- Heat the heavy cream in a saucepan until hot.100 ml heavy cream
- Add the broken chocolate to it and stir until you get a smooth glaze.150 g white chocolate
- Add cinnamon to the chocolate and mix with a spatula.0.5 teaspoon cinnamon
- Pour a little cold water over the gelatin and leave for about 5 minutes – after this time, briefly heat it (e.g., in the microwave) and add to the still hot chocolate – mix thoroughly.0.5 teaspoon powdered gelatin
- Cover the surface of the chocolate with a plastic bag or cling film.
- Refrigerate for at least 6 hours to chill – or preferably overnight.
Step 2 – preparing the gingerbread cupcake batter
- Preheat the oven to 170 degrees (fan-forced) or 180 degrees (top/bottom heat mode).
- Pour the dry ingredients for the cupcakes into a large bowl and mix with a spoon.190 g wheat flour – all-purpose, 100 g sugar, 2 teaspoons baking powder, 1.5 teaspoons gingerbread spice
- Add the wet ingredients to the bowl – rapeseed oil, honey, and eggs.120 ml rapeseed oil, 100 g honey, 2 eggs
- Mix everything together with a spoon until smooth – the batter will be quite thick. If the ingredients don’t combine well, you can add a little milk.
- Spoon the batter into the prepared cupcake liners.
Step 3 – baking the gingerbread cupcakes
- Place the cupcakes in the oven and bake for about 20-25 minutes – until a dry skewer comes out clean.
- After baking, cool the cupcakes completely before decorating with cream.
Step 4 – preparing the cinnamon cream
- Transfer the chilled chocolate with cream to a large bowl and start mixing with an electric mixer.
- Add the chilled mascarpone cheese in portions and mix until combined.
Step 5 – decorating gingerbread cupcakes
- Transfer the cream to a piping bag fitted with a nozzle.
- Pipe the cream onto the cupcakes.
- Decorate the cupcakes as desired – e.g., with gingerbread cookies and colorful sprinkles.

Once again, I am participating in the “Love Rapeseed Oil” campaign and I warmly encourage you to use rapeseed oil in your kitchen not only for cooking, but also for baking!
Cakes made with oil are simple, easy, and quick to prepare, they stay fresh for a long time, and are more moist than those baked with butter. What’s more, they are very tasty because oil has a neutral taste and aroma.
My today’s gingerbread cupcakes are a good example of this. You can prepare the cupcakes themselves even without using a mixer. A bowl and a spoon are enough. Thanks to the use of oil, the cupcakes (without cream) do not need to be stored in the refrigerator, and when transferred to an airtight container, they will stay fresh and taste great for a very long time. Be sure to try this recipe and see how delicious they are!

Why you should replace butter with rapeseed oil in baking recipes?
Liquid oils are excellent as a butter substitute. Without any problem, using rapeseed oil, delicious shortcrust pastry or other types of baked goods can be made. And how many additional health benefits it brings! Butter is an animal fat, containing primarily saturated fatty acids. The impact of these types of lipids on health has been studied for years. They are primarily highly pro-inflammatory for the body, as strongly as sugar. Inflammation is a precursor to the development of diseases. Saturated fatty acids negatively affect the cardiovascular system by increasing cholesterol and triglycerides. And yet butter itself also contains cholesterol. Meanwhile, vegetable fats, including rapeseed oil, contain valuable polyunsaturated fatty acids with opposing effects. They have strong anti-inflammatory properties and protect our heart!

How to decorate Christmas gingerbread cupcakes?
I decorated my cupcakes with a sweet white chocolate cream, additionally flavored with cinnamon. Cinnamon cream perfectly complemented and harmonized with the taste of the spiced cupcakes. This cream is not difficult to prepare, but it does require time to chill. If you have little time, you can make a simpler and quicker cream from just whipping cream and mascarpone cheese. Whip together cold whipping cream (250 ml) and cold mascarpone cheese (250g) into a very thick cream. Add 2-3 tablespoons of powdered sugar and a teaspoon of cinnamon to taste. Decorate the cupcakes with the cream prepared this way.
The cupcakes look beautiful when additionally decorated with small gingerbread cookies; you can also use orange slices, colorful sprinkles, fresh cranberries, or pomegranate seeds. Besides these decorations, you can also sprinkle the cream with a little cinnamon or grated chocolate. Remember that on a cream made solely from whipping cream and mascarpone, sugar sprinkles may dissolve and color the cream. For this type of cream, chocolate decorations will be a better choice than sugar ones!

How many kcal do gingerbread cupcakes have?
The calorie count of one cupcake decorated with cream is provided in the table below the recipe and is approximately 390 kcal – this is the calorie count without additional decorations – just the cupcake and cream. However, a cupcake without cream has approximately 218 kcal (carbohydrates – 27, fats – 11, proteins – 3 g). If you’re looking for a low-calorie baked good, skip the cream and eat just the cupcakes – they taste delicious even without cream :) Instead of white chocolate cream, you can spread them with a little plum jam for flavor – gingerbread and plum jam are always a perfect combination :)

How to store gingerbread cupcakes?
Cinnamon cream based on white chocolate is very stable, and cupcakes decorated with it can stand outside for several hours – but away from heat sources. If you want to store them longer, and you already have all cupcakes decorated with cream, put them in the refrigerator. Thanks to using rapeseed oil for baking the cupcakes, they will not harden in the refrigerator, unlike cupcakes baked with butter. If you haven’t decorated all the cupcakes yet, transfer the undecorated cupcakes to a container and keep them at room temperature, and store only the cream in the refrigerator. Then, before piping, warm the cream slightly at room temperature so it’s easier to pipe.
