Today I invite you to an incredibly delicious and beautifully presented cold apple cake. I made the cake on a light and fluffy sponge cake, which has an apple filling inside and is finally decorated with whipped cream. Thanks to its generous fruit layer, Kilimanjaro cake will be wonderfully refreshing on hot summer days. Such a sponge cake layered with apples in jelly and whipped cream will be perfect for a weekend or special occasions.

Kilimanjaro Apple Cake Recipe Step by Step
If you like apple cakes, especially light and refreshing cold-served cakes, then Kilimanjaro cake will be perfect!

Kilimanjaro Cake Recipe

- Baking pan measuring 24/24 cm or 20/30 cm.

- 4 egg whites (from size L eggs)
- 4 egg yolks
- 100 g sugar (- half a glass)
- 75 g wheat flour – all-purpose (- half a glass)
- 50 g potato starch (- 3 slightly heaped tablespoons)
ingredients for the apple filling
- 2 jars stewed apples (Stovit – I used with orange peel – 720 g each)
- 2 jelly powder (light-colored – e.g., orange, lemon)
ingredients for whipped cream
- 250 ml heavy cream (well chilled, I used 30%)
- 125 g mascarpone cheese (chilled)
- 100 g white chocolate

How to make the sponge cake for Kilimanjaro cake
- Whip the egg whites with sugar until very thick, white, and glossy.4 egg whites, 100 g sugar
- Meanwhile, sift both flours together through a sieve.75 g wheat flour – all-purpose, 50 g potato starch
- Add the egg yolks to the whipped egg whites and gently mix.4 egg yolks
- Pour in the flours and gently mix with a spoon.
- Line the bottom of the baking pan with parchment paper.
- Transfer the batter to the pan and place in the oven.
- Bake at 170 degrees Celsius (convection mode) for approximately 20 minutes – until a dry skewer comes out clean.
- After baking, let it cool, then cut into two layers.
How to make the stewed apples for Kilimanjaro cake
- Transfer the apples from the jars to a pot and heat them up.2 jars stewed apples
- When hot, add the jelly powder and mix thoroughly.2 jelly powder
- Place one sponge cake layer in the baking pan – you can lightly soak it with sugar water and a little lemon juice.
- Spread the apples over the sponge cake and cover with the second cake layer (you can also soak this one).
- Set aside the cake to cool and for the filling to set (preferably put the cake in the refrigerator).
How to make whipped cream for the cake
- Melt the white chocolate in a double boiler – pour some water into the bottom of a pot and bring to a boil.100 g white chocolate
- Place a bowl on top of the pot and add the broken chocolate to it, wait until it melts from the steam – stir and set aside to cool.
- Whip the cold heavy cream until thick.250 ml heavy cream
- Whip the mascarpone cheese with the cooled chocolate, then whip together with the whipped cream.125 g mascarpone cheese
- Decorate the top of the cake with whipped cream.

Kilimanjaro Apple Cake – Notes
Kilimanjaro Cake is a popular cake on the internet.
The main ingredient here are roasted apples, which are combined with a cocoa sponge cake.
I decided to make my own version of this cake.
Instead of chocolate cake, I baked a delicate white sponge cake.
I layered it with two jars of Roasted Apples with a hint of orange from Stovit and finally added a snowy cap of whipped cream.
Jellies give stability to the apple filling.
You can “boost” the orange flavor of the apples and use orange jellies.
All yellow and orange, as well as clear jellies, will work great here.

How to make apple Kilimanjaro cake?
First, bake a white sponge cake, let it cool, and cut it into two layers.
You can bake the sponge cake 2-3 days in advance, wrap it in cling film, and leave it until the day you make the cake.
A rested sponge cake cuts into layers better and tears less when slicing.
Once you have the white sponge cake, make the apple filling.
Transfer the apples from the jar to a pot and heat them.
Add two jellies – just the powder (do not dissolve the jelly in water beforehand) – to the slightly hot apples.
Mix the jellies thoroughly with the apples.
Place one of the sponge cake layers into the baking pan (you can lightly moisten it with water and a little sugar).
Spread the apples over the sponge cake and cover them with the second cake layer.
Now you need to wait for the apples to set – it’s best to put the cake in the fridge for a few hours.
Before serving, decorate the cake with whipped cream.
For greater stability, I added mascarpone cheese and white chocolate :)
