Recipe for cookie truffles with nuts and chocolate
Today I invite you to try delicious and very simple nutty balls prepared without baking from blended cookies and nuts. Such homemade truffles are a great idea for a light snack. The balls, additionally coated in nuts, almonds, and shredded coconut, look beautiful, so you can even give them as a gift! Be sure to try this recipe for a no-bake dessert and no long hours in the kitchen!

Nutty balls recipe step by step
If you are looking for an idea for a sweet snack that you don’t have to bake, try this recipe for chocolate truffles with nuts.

- 150 g walnuts (Helcom)
- 300 g shortbread cookies
- 100 g chocolate (I used dark)
- 50 g powdered sugar (1/3 cup – or to taste)
- 100 ml apple juice

How to make nutty balls step by step
Step 1 – grind the nuts
- Transfer walnuts to a food processor or blender and blend into a fine meal.150 g walnuts
- Transfer the ground nuts to a larger bowl.
Step 2 – grind the cookies
- Break the cookies into smaller pieces, transfer to a food processor and blend until they are a fine powder.300 g shortbread cookies
- Transfer the cookies to the bowl with the nuts.
Step 3 – melt the chocolate
- Break the chocolate into pieces and melt it – I melted it in a double boiler (I poured some water into the bottom of a small pot and brought it to a boil, then placed a metal bowl with the broken chocolate on top and heated it over the steam until it was liquid).100 g chocolate
- Add the chocolate to the bowl with the nuts and cookies.
Step 4 – prepare the balls
- Add powdered sugar and apple juice to the bowl and mix everything thoroughly to get a cohesive mass.50 g powdered sugar, 100 ml apple juice
- If the mixture doesn’t come together into a uniform mass, you can add a little more melted chocolate or honey.
- Scoop portions of the dough with a spoon and roll them into balls (it’s easier to form balls when your hands are slightly moistened with water).
Step 5 – coat the balls in dried fruits and nuts
- Chop the hazelnuts into small pieces and transfer them to a bowl.hazelnuts
- Into two other bowls, add desiccated coconut and lightly crushed flaked almonds.flaked almonds, desiccated coconut
- Coat the balls in the dried fruits and nuts, pressing them lightly onto the balls.
Step 6 – chill the balls in the refrigerator
- You can eat the balls immediately, but they are better after chilling in the refrigerator for a few hours.

Homemade nutty truffles notes
Today, together with Helcom and Życie ma Smak, we invite you to try sensational and easy-to-prepare homemade truffles. I prepared my balls from shortbread cookies and walnuts blended into a powder. Finally, I coated each ball additionally in crushed almond flakes, chopped hazelnuts, or coconut flakes. The dried fruits and nuts added an extra unique taste and, of course, a wonderful appearance to the balls. You can choose your favorite dried fruits and nuts here to further diversify the taste and appearance of the balls.
You can also make a batch of my healthy truffles with dates, almonds, and sunflower seeds :)

Ingredients needed to prepare the balls
To prepare such truffles, you will only need a few basic ingredients. Below is a list of products I used and possible substitutes.
- nuts – for the balls themselves, I added ground walnuts, but you can also substitute them with hazelnuts, pecans, or almonds
- cookies – I used multi-grain shortbread cookies without added sugar, you can also use shortbread biscuits, or shortbread oat cookies – choose your favorite cookies – it’s important that they crumble well into a powder
- juice – for better binding of the mixture, I added 100 ml of apple juice, you can also choose another juice – e.g., orange
- chocolate – I used dark chocolate because I don’t like overly sweet snacks, you can replace it with milk or dessert chocolate
- sugar – I used a little powdered sugar, if you don’t want to add white sugar to the balls, choose another form of sweetener – it can be honey, maple syrup (then add less juice), erythritol or xylitol

How to make nutty balls – tips
For the ball mixture to stick well, it is important to blend the nuts and cookies into a fine powder. I recommend a food processor here, or a blender or a grinder. Melted chocolate and juice help combine the dry ingredients into a sticky mass. However, if you have very dry cookies or nuts, the mixture might not combine nicely. In that case, I recommend adding a little honey or agave syrup, which will help bind the mixture.
While rolling the balls, the mixture may stick slightly to your hands. Lightly wetting your hands with water helps, then the dough sticks less.
You can also arrange the finished balls in small paper cups – they will look beautiful and be easy to serve. You can also give such balls in paper cups as a gift :)

How many calories do truffles have?
In the table below the recipe, I provided the calorie count for 100 g of truffles. However, if you make 28 pieces (like me), each ball will have approximately 130 kcal (carbohydrates – 12 g, protein – 2 g, fat – 8 g). I am providing the calorie count here based on the products I used.

How to store nutty balls?
It’s best to store the balls in the refrigerator – especially on hot days. When taken out of the fridge, they are nicely refreshing and taste great. On cooler days, you can keep them on the kitchen counter – but preferably in a small box. You can also freeze truffles for about 3 months.
