  • 2 eggs (- size L)
  • 1 teaspoon vanilla extract (or a small packet of vanilla sugar)
  • 225 g wheat flour – all-purpose (- 1.5 cups)
  • 2 teaspoons baking powder
  • 120 ml 18% cream

How to make strawberry cake

  • Wash the strawberries, cut off the stems, and halve them. If the fruits are very large, you can quarter them.

  • Cream the butter with sugar and vanilla until fluffy and almost white.

  • Then add one egg at a time and mix briefly.

  • Sift the flour together with the baking powder and add to the butter mixture.

  • Add the cream and mix briefly – just until combined!

How to make strawberry cake – tips

If you were wondering how to make a fruit cake that always turns out, then prepare this very cake.

Many of you have a problem with why strawberries sink to the bottom of the cake and as a result, the cake doesn’t look as nice.

Strawberries and other fruits sink during baking when the batter is light and thin. Then, as the cake rises, the fruits sink to the bottom under their own weight – the batter is unable to hold them.

If you prepare a denser creamed cake, the fruits will not sink to the bottom of the pan.

Second thing – it’s better to arrange the fruits on top of the cake with the skin side down.

During baking, fruits start to release juice, and when they lie with the cut side down, this juice soaks into the cake and softens it – this can even lead to a soggy cake! Especially if the fruits are very juicy – like strawberries.

Therefore, it’s worth arranging strawberries for the cake with the skin side down. This way, the cake will not absorb too much of their juice.

What kind of cake with frozen strawberries? For frozen strawberries, it’s also better to prepare a denser creamed cake, or a dense yogurt cake. Then, as the strawberries thaw and release water, they won’t soak the cake too much.

Should strawberry cake ingredients be at room temperature?

For creamed cakes, it’s better if the ingredients are at room temperature.

We use soft butter here, so when you take it out of the fridge to warm up, take out the cream and eggs right away too.

You can also warm the eggs by pouring hot water over them.

Remember that creamed cakes don’t like flour being mixed for too long!

After adding flour to the butter mixture, mix the batter briefly, just until the ingredients are combined.

Mixing the cake batter with flour for too long can even lead to a soggy cake. And the cake might be a bit tough after baking.

It’s best to store strawberry cake outside the refrigerator – especially creamed butter cake.
