And what’s more interesting – very often no one will realize they are eating a vegetable.
This is especially useful with children, who are usually “at odds” with eating vegetables.
It turns out you can add vegetables to their sweet pancakes, to cookies, crepes, waffles and of course cakes.

There’s no better way to incorporate healthy vegetables into your diet than through vegetable cakes! Carrot, pumpkin, zucchini, or beetroot cakes are delicious and healthy baked goods that are an excellent source of vitamins, minerals, and fiber.
By adding fresh, chopped vegetables to the cake, we get not only a unique taste but also a beautiful color and pleasant texture. These baked goods are perfect as a healthy alternative to traditional cakes and desserts, and also as a way to encourage children to eat vegetables.

Which vegetables are best to add to cake?
Preferably naturally sweet ones, but not only.
I’ve already made cakes with potatoes, sweet potatoes, beets, carrots, zucchini, pumpkin, avocado, parsley, hot peppers, and spinach. And also with red beans and canned chickpeas (or more precisely, with the water from those chickpeas – you can make meringue from it :D).
Rhubarb is also a vegetable :) only Americans consider it a fruit :D
