- 375 g wheat flour – all-purpose (2½ cups)
- 200 g sugar (1 cup)
- 2 teaspoons baking powder
- 2 tablespoons grated lemon zest (from one large lemon)
- 65 g chia seeds (⅓ cup)
- 2 eggs (size L)
- 250 g ricotta
- 280 g Greek yogurt (heaping cup)
- 120 ml oil
- 2 spoons lemon juice

How to make ricotta and chia muffins step by step
Step 1 – preparations
- Preheat the oven to 180℃ (top/bottom heat) or 170℃ (fan-assisted).
- Prepare muffin liners – if they are soft, place them additionally in a muffin baking pan.
Step 2 – preparing the muffin batter
- Transfer the dry ingredients for the muffins and lemon zest to a large bowl – mix with a spoon.375 g wheat flour – all-purpose, 200 g sugar, 2 teaspoons baking powder, 2 tablespoons grated lemon zest, 65 g chia seeds
- Crack the eggs into a small bowl and whisk with a fork – pour them into the bowl with the dry ingredients.2 eggs
- Add the ricotta and remaining wet ingredients to the bowl.250 g ricotta, 280 g Greek yogurt, 120 ml oil, 2 spoons lemon juice
- Mix everything briefly with a spoon – just until combined – the batter will be thick.
- Fill the muffin liners about 2/3 full – I got 14 large muffins.
Step 3 – baking ricotta muffins
- Place the muffin pan in the preheated oven and bake for about 20-25 minutes – depending on the size of the liners.
- After baking, let the muffins cool.
Step 4 – preparing the icing for the muffins
- Pour the powdered sugar into a bowl (you can use more) and mix with lemon juice added in portions.approx 50 g powdered sugar, a little lemon juice
- Gently drizzle the slightly runny icing over the muffins.

Why make ricotta and chia muffins?
My today’s muffins baked with ricotta cheese and Greek yogurt come from Donna Hay’s book “Modern Baking”. I highly recommend this recipe because the muffins are incredibly simple and quick to prepare – you don’t even need to get out a mixer – just mix the ingredients with a spoon! What’s more, the muffins are extremely delicious and moist – thanks to the combination of ricotta and Greek yogurt – which also means that such a muffin has a fairly high amount of protein! Additionally, chia seeds – as a superfood – add healthy nutritional value. Such chia muffins will be perfect as a dessert with coffee, but also as a snack during the day – at school, at work, after sports training, or you can eat them for a quick and delicious breakfast. Be sure to try this recipe and save it for later!

Ingredients necessary for baking ricotta muffins
To make such delicious muffins at home, you need a few basic ingredients. Below is a shortened list of products I used and possible substitutes.
- ricotta – this is a delicious, light Italian cheese, you can easily buy it in every Lidl or Biedronka, as well as in large supermarkets. However, if you absolutely cannot get it, you can use a lighter, more moist cheesecake curd.
- Greek yogurt – I used full-fat, but you can also use light yogurt. If you don’t have Greek yogurt, you can substitute it with natural skyr or thick (not watery) natural yogurt.
- chia – chia seeds, or Spanish sage seeds, are small, edible seeds originating mainly from Mexico, valued as a “superfood”. They are a rich source of omega-3 fatty acids, fiber, protein, and minerals. We add them here in seed form – not soaked.

What to substitute for chia seeds in muffins?
If you don’t have chia seeds, it’s not a problem – just don’t add them – the muffins will be just as tasty without them. But if you want to and have unground blue poppy seeds at home, you can use them instead of chia seeds.
You can also add small fruits to the muffins instead of seeds – such as blueberries. You can also use raspberries – but frozen fruits will be better, as fresh raspberries will break apart significantly when mixed with the thick batter.

How to store muffins with ricotta and chia?
After baking and cooling, muffins with chia seeds are best transferred to an airtight container with a lid to prevent them from drying out. Chia seeds added to muffins strongly absorb moisture and will naturally make the muffins less moist after a few days than on the day they were baked.

Can ricotta muffins be frozen?
Yes, ricotta muffins are great for freezing. After they have completely cooled, simply place them in an airtight container or bag and store them in the freezer for up to approximately 2 months.
