- 150 g spinach (if using frozen, thaw it on a sieve)
- 3 eggs (size L)
- 200 g yogurt (I used Greek – 3/4 cup)
- 60 ml oil (1/4 cup)
- 3 tablespoons lemon juice
- 300 g wheat flour – all-purpose (2 cups)
- 2 teaspoons baking powder
- 150 g sugar (3/4 cup)

- 2 tablespoons powdered sugar

How to make spinach cake with whipped cream
- Put spinach, yogurt, eggs, oil, and lemon juice into a bowl or blender.150 g spinach, 3 eggs, 200 g yogurt, 60 ml oil, 3 tablespoons lemon juice
- Blend until smooth.
- Mix the flour with baking powder.300 g wheat flour – all-purpose, 2 teaspoons baking powder, 150 g sugar
- Add the wet ingredients to the flour and mix with a spoon.
- Pour the batter into the mold and level the surface.
- Place in an oven preheated to 170 degrees (convection) and bake for approximately 30 minutes – until a dry stick comes out clean.
- After baking, cool the cake.
- Cut off the slightly convex part of the cake with a knife.
- Whip the heavy cream with powdered sugar into a thick whipped cream.300 ml heavy cream, 2 tablespoons powdered sugar
- Spread the whipped cream over the cake.
- Crumble the cut-off cake thoroughly, or blend it into small pieces.
- Sprinkle the top of the cake with crumbs.

Spinach Cake with Whipped Cream – notes
My daughter has been nagging me lately to bake moss cake with spinach. She really liked this cake, and I hadn’t made it in a long time. I didn’t feel like making a whole cake, so I decided to make a simple spinach cake. I focused on simplicity and speed of preparation here. That’s why I took out frozen spinach earlier and defrosted it in a sieve, then squeezed out the excess water. To make my work as easy as possible, I put spinach, yogurt, eggs, oil, and a little lemon juice into a blender and blended everything into a smooth mass. Then it was enough to add the wet ingredients to the flour with baking powder and sugar and mix with a spoon. This way, I prepared a quick spinach cake in about 10 minutes! Thanks to the spinach and yogurt, the cake is nicely moist and doesn’t feel as greasy as the moss cake.

In what pan to bake spinach cake?
I baked the spinach cake in a large baking pan; it came out flatter and baked faster. I chose a 20/30 cm pan here, but you can also bake this cake from the same portion in a 24/24 cm pan, or in a round pan with a diameter of 26 cm. I baked the cake for about 30 minutes – until a dry skewer came out clean, of course. After baking, I cooled the cake and only then started decorating.
I spread the cake with whipped cream and sprinkled it with crumbs from the blended cake. We really enjoyed the spinach cake, and my daughter practically devoured it. Now that baking spinach cake is so simple, she’ll be able to make it herself whenever she feels like it. Because this cake is child’s play!

Best of all, it tastes amazing—you cannot taste the spinach in the cake at all. After baking, you can decorate it just like I did, with simple whipped cream. The whipped cream is just cold heavy cream whipped with powdered sugar. Alternatively, you can prepare a cream cheese frosting—simply blend a light cream cheese (like Bieluch) with powdered sugar and spread it over the cake.
Before applying the cream, I suggest cutting off the raised top dome of the cake and crumbling it into fine crumbs. You can then sprinkle these crumbs over the cream.
