Gelatin is soluble in water and gels under the influence of temperature, which allows to obtain the appropriate consistency in food products.

It is used as a thickener, emulsifier, stabilizer and texture modifier in food products.

Gelatin has a low nutritional value because it consists mainly of proteins that do not contain complete amino acids. It is also poor in vitamins and minerals. However, it contains certain amounts of collagen, which can have a beneficial effect on the health of the skin, joints and bones.

People on a vegetarian or vegan diet do not consume animal products, including gelatin, and often use plant-based alternatives, such as agar or pectin.
