I invite you to try delicious and incredibly green spinach waffles. Here, I prepared the waffle batter with spinach, and thanks to that, I achieved this wonderful, fresh green color. For these waffles, you can use both fresh and frozen spinach (you need to thaw it on a sieve beforehand). I served my waffles sweet, but you can just as well serve them savory – e.g., with cottage cheese, avocado, or even a fried egg!

If you like crispy waffles and can eat them at any time of day, then you absolutely must fry these amazing green waffles.

- 2 egg yolks (from size L eggs)
- 2 egg whites
- 2 tablespoons erythritol (or sugar)
- 225 g wheat flour – all-purpose (1.5 cups)
- 1 teaspoon baking powder
- 200 ml water
- 50 g spinach
- 3 tablespoons oil
- 1 tablespoon lemon juice
- Jam (blackcurrant from Stovit)

How to make green spinach waffles
- If you have frozen spinach, defrost it on a sieve beforehand.50 g spinach
- Blend together water, oil, lemon juice, and spinach until the spinach is as finely chopped as possible.200 ml water, 3 tablespoons oil, 1 tablespoon lemon juice, 50 g spinach
- Blend the egg yolks with erythritol or sugar.2 egg yolks, 2 tablespoons erythritol
- Mix the flour with baking powder.225 g wheat flour – all-purpose, 1 teaspoon baking powder
- To the blended egg yolks, alternately add flour and water with spinach – blend until the ingredients are combined.
- Whisk the egg whites with a pinch of salt until thick.2 egg whites
- Add the whipped egg whites to the batter and gently mix with a spoon.
- Heat the waffle maker, spoon in the batter, and cook the waffles.
- After cooking, place the waffles on a wire rack – do not stack hot waffles on top of each other, as they will soften.
- Serve the waffles with your favorite jam – I used Stovit Blackcurrant Jam.Jam

Waffle Batter with Spinach – Notes
I recently treated my family to these positively green spinach waffles.
I must admit, their color had an energizing effect :) Besides, it’s clear from the photos that they looked positively spring-like. And they tasted delicious – and no, there was no spinach taste.
My daughter ate 4 of them at once!
My spinach waffles turned out crispy and “substantial”.

How to Make Spinach Waffles – Tips
You can use fresh or frozen spinach. If you have frozen, you need to thaw it beforehand. Then blend the spinach with water, oil, and a little lemon juice. The better you blend it all, the better – I did it with a blender. You add this smoothie to the egg yolks and flour, and finally add the whipped egg whites.
Fry the waffles in a very hot waffle iron!
Serve the waffles immediately – and do not stack hot ones on top of each other!
I served my waffles sweet with whipped cream and blackcurrant jam from Stovit.
Craving spinach waffles with banana? Nothing is stopping you – add sliced banana to them for a very nutritious breakfast or meal.
If you fancy a savory version, omit the sugar in the batter.
