- 3 apples (large – over 600 g for me)
- 160 g butter (soft)
- 200 g powdered sugar (1⅓ cups)
- almond extract (optional – to taste)

- 125 g all-purpose flour (⅔ cup and 2 slightly heaped tablespoons)
- 125 g almonds (ground – 1 cup)
- 2 teaspoons baking powder
- approx. 30 g almond flakes

How to make almond cake with apples step by step
Step 1 – preparations
- Preheat the oven to 170℃ (fan-forced) or 180℃ (top/bottom heat mode).
- Grease the baking pan with butter and sprinkle with breadcrumbs or flour (you can also line it with baking paper).
- Mix together the flour, almonds, and baking powder.125 g all-purpose flour, 125 g almonds, 2 teaspoons baking powder
- Dice two larger apples.3 apples
- Slice the third apple.
Step 2 – preparing the creamed almond cake
- Place butter and sugar in a large bowl (if you wish, you can add a touch of almond extract) and start mixing them together at high speed.160 g butter, 200 g powdered sugar, almond extract
- Beat for several minutes until the butter mixture becomes fluffy and pale in color.
- Then add one egg at a time and a spoonful of the mixed flour to the bowl – mix briefly – just until combined and at low speed of the mixer.4 eggs
- Once you’ve added all the eggs, add about half of the remaining flour and mix briefly, then add the rest of the flour and mix just until combined – stop mixing when you still see remnants of flour.
- Then turn off the mixer and gently fold the batter with a spoon.
- Add the diced apples to the batter and gently mix.
- Transfer the batter to the prepared pan.
- Arrange the sliced apple on top and finally sprinkle the top of the cake with almond flakes.approx. 30 g almond flakes
Step 3 – baking the almond cake with apples
- Place the pan with the cake on the middle rack of the oven and bake for about 50-55 minutes – until a wooden skewer inserted comes out clean.
- After baking, cool the cake and remove it from the pan.

Today I have for you a recipe for the perfect winter cake, autumn and beyond, because it’s a recipe that will work any time of year. The cake itself is incredibly moist and fluffy, full of juicy apple pieces and with a wonderful, delicate almond aroma. This taste of almonds and apples is made for each other, and no one, especially me, can resist it! I first spotted the recipe for this simple almond cake with apples on TikTok, and then found it online at Audrey’s – I slightly adapted it to my needs and am now sharing it with you. Be sure to save this recipe for later, because I guarantee you’ll want to come back to it!

Ingredients for moist almond cake with apples
To bake this perfect apple cake at home, you will only need a few basic ingredients. Below is a condensed list of the products I used and possible substitutions:
- apples – large, firm apples like Jonagold or Ligol will be best; if you have small apples, use at least 600g of them. I didn’t peel them, only removed the core.
- butter – I used 82% extra butter, and that will be best, but ultimately you can use a butter-type mix or vegetable butter.
- sugar – for creamed cakes, I love using powdered sugar because it mixes very quickly and easily with soft butter into a perfect mass. If you don’t have powdered sugar, you can use regular sugar, but then be prepared for longer creaming of butter with sugar!
- almonds – for the cake, you will need two types – ground almonds, also known as “almond flour,” and almond flakes (although you can also use slivered almonds, or chop whole almonds and sprinkle them over the cake).

How to make ground almonds?
Don’t have ground almonds and can’t get them in the store? No problem, you can grind almonds into a powder. To make it easier and much faster, I recommend grinding almond flakes – just transfer them to a food processor (or even a coffee grinder) and blend them briefly. You’ll grind almond flakes into a powder in literally a second. Of course, you can also grind whole almonds, but that will take a bit longer. It’s best to use blanched almonds here (i.e., white ones, without skin), but if you use almonds with skin, there’s no problem either. The only thing is that the cake will have a darker color.

How to make almond cake with apples so it turns out well?
For the creamed apple cake to turn out nicely and without being gummy, it is essential that all ingredients are at room temperature! Therefore, take everything out of the refrigerator at least two hours beforehand. This especially applies to butter and eggs. The butter must be soft to mix well. You can place the eggs in hot water for a dozen minutes to warm them up. If you keep ground almonds in the refrigerator (like me), you also need to take them out earlier to warm up.
Adding cold ingredients to butter creamed until fluffy can cause the batter to curdle! It is also very important that after creaming the butter with sugar, the remaining ingredients are mixed very briefly. Such a creamed cake cannot be mixed for too long, as it will lose its fluffiness and may turn out gummy!

How to store almond apple cake?
After baking and completely cooling, it’s good to cover the fluffy almond apple cake with a cake dome or transfer it to an airtight container with a lid. The cake can stay at room temperature for about 3 days (if you bake the cake in summer and it’s hot and humid, it’s better to put it in the fridge on the second day so it doesn’t spoil!). If you plan to store the cake longer, you can keep it in the refrigerator. In that case, take it out of the fridge earlier (at least half an hour) before serving, so it warms up and regains its fluffiness (due to the high butter content, the cake will harden slightly when in the fridge; it needs to warm up to become soft again).
You can also freeze the cake for about 3 months.
