How to make cinnamon rolls with plums step by step
Step 1 – preparing the yeast starter
- Crumble the yeast into a bowl, add sugar and lukewarm (not hot!) milk, and mix until the yeast dissolves.15 g yeast, 125 ml milk, 1 teaspoon sugar
- Cover the bowl and set aside in a warm place for about 20 minutes for the yeast to activate.
Step 2 – preparing the yeast dough
- Transfer the dough ingredients to a large bowl.300 g wheat flour, 50 g sugar, 1 egg, 40 g butter
- Add the risen yeast starter and knead into a smooth dough – I mix for a few minutes with a dough hook on low speed.
- Cover the bowl with the kneaded dough and set aside in a warm place for about an hour for the dough to rise and double in volume.
Step 3 – preparing the filling
- While the dough is rising, wash the plums, cut them in half, and then cut into smaller pieces.approx 500 g plums
- Mix the sugar with cinnamon.100 g sugar, 1 tablespoon cinnamon
Step 4 – preparing cinnamon rolls with plums
- Take the risen dough out onto a lightly floured surface and knead briefly.
- Roll out into a thin sheet, maximum 0.5 cm thick.
- Brush the entire surface of the dough with melted butter – I recommend a silicone brush.approx 25 g butter
- Sprinkle the top of the dough with the sugar and cinnamon mixture.
- Arrange the plums and spread them in an even layer.
- Roll the dough into a log – I do it from the wider side.
- With a sharp knife, gently mark on the log where the buns will be divided – I first gently cut in the very middle, then in the middle of each half, and then again in the middle of each piece, thus obtaining 8 portions.
- Using a thread, divide the dough into portions – plums may fall out ;)
- Arrange the buns in the prepared pan (greased with butter and floured).
- Add the plums that fell out during slicing to the buns.
- Cover the pan with the buns and set aside for about 30 minutes to puff up.
Step 5 – baking cinnamon rolls
- While the buns are rising, turn on the oven to 180 ℃ in top/bottom heating mode.
- Place the risen buns in the pan into the preheated oven and bake for about 30 minutes – until nicely browned.
- After baking, cool the buns.
Step 6 – preparing the glaze for the buns
- Pour the sugar into a bowl, add milk in portions – mix until all the sugar dissolves and you get a slightly runny glaze.approx 150 g powdered sugar, 2-3 tablespoons milk
- Spread the glaze over the top of the cinnamon rolls.

Autumn and uglier weather outside always encourage me to bake aromatic cakes with cinnamon. This time I opted for delicious, fluffy yeast buns rolled with cinnamon sugar and a mass of Polish plums. Thanks to the plums, traditional cinnamon rolls gained an unusual character and great moisture. Combined with the glaze, they tasted absolutely fantastic! You absolutely must bake these buns this autumn. The recipe itself is very simple, and I have described it very accurately and in detail. What ingredients are needed to bake plum and cinnamon buns?
To make delicious homemade cinnamon yeast buns with plums, you will need a few basic ingredients. Below is a shortened list of products I used and possible substitutes.
- yeast – I used fresh yeast here, but you can substitute it with instant yeast – you can use a 7g packet, you can prepare this yeast just like fresh, or add it directly to the other ingredients for the buns and knead the dough immediately
- milk – mine is 1.5% milk, but you can also use milk with a different fat content
- flour – the best here is type 500 or 550 flour
- plums – you can use any plums, but firmer ones will be better so they don’t “fall apart” too much; mine were ‘pychotka’ plums, ‘węgierki’ (Hungarian plums) will also be good

How to reduce the calorie content of cinnamon rolls with plums?
If you want yeast buns with plums to have a bit fewer calories, you can replace the sugar in the recipe with erythritol. Only leave the teaspoon of sugar added to the yeast. The rest – sugar for the dough, sugar for the filling, and for the glaze can be replaced with erythritol, which has 0 calories. Then one such bun will have only about 156 kcal.

If you’re in a hurry, or your house is cool, you can help the dough and yeast starter rise. I then place the bowl with the kneaded dough, covered, into the oven with the heating turned on to 30 degrees Celsius. In such conditions – warmth and a small, enclosed space without drafts – the dough rises very nicely and quickly.
How to store cinnamon rolls with plums?
After the yeast buns have completely cooled, cover them with foil or transfer them to an airtight container with a lid. This will protect the buns from drying out and allow them to retain their freshness and fluffiness longer.
Can cinnamon rolls be frozen?
Yes, you can freeze cooled yeast buns for about 3 months. After thawing, it’s worth briefly heating them in the oven to restore their fluffiness and softness.
Can other fruits be used instead of plums?
Yes, you can use other seasonal fruits – e.g., apples, pears, or peaches. Remember to cut them into smaller pieces.
