- 110 g butter (melted)
- 200 g sugar (1 cup)
- 2 eggs (size L)
- 300 g all-purpose flour (2 cups)
- 1 teaspoon baking powder
- approx 250 g raspberries
- milk (optional – to consistency)

How to make raspberry blondies step by step
Step 1 – preparations
- Preheat the oven to 170℃ (fan-assisted).
- Line the baking pan with parchment paper or grease with butter and dust with flour.
- Mix together the flour and baking powder.300 g all-purpose flour, 1 teaspoon baking powder
Step 2 – preparing the blondie batter
- Pour the melted butter into a large bowl, add the sugar and mix.110 g butter, 200 g sugar
- Add the eggs to the bowl and mix with a whisk.2 eggs
- Add the flour with the baking powder and mix – the batter will be thick.
- If the batter is too thick and hard to mix, add a little milk or buttermilk/yogurt in portions.milk
- Transfer the batter to the prepared pan.
- Arrange the raspberries on top of the batter and gently press them down.approx 250 g raspberries
Step 3 – baking the raspberry blondie
- Place the pan in the preheated oven and bake for about 40 minutes – until a toothpick comes out clean.
- After baking, cool the cake.

Why bake blondie cake with raspberries?
I recently fancied a quick and uncomplicated cake, and since I didn’t have any ‘fancy’ ingredients, I opted for this very simple and easy-to-prepare cake with raspberries. To make the cake, all you really need is one large bowl, a whisk, and a spoon. You don’t need a mixer to make this cake, although of course you can use one if you prefer. This blondie is a perfect combination of sweetness and raspberry tartness. It’s neither too sweet nor too tart. Therefore, you can additionally decorate it with a little powdered sugar or frosting.

What ingredients are needed to make blondie with raspberries?
To bake this cake at home, you only need 6 ingredients, and very basic and widely available ones at that. Below is a condensed list of the products I used and possible substitutes.
- raspberries – I used frozen raspberries – you don’t need to thaw them beforehand; fresh fruit can also be used, but in that case, don’t press them into the dough, as they will break apart more easily
- butter – I used extra 82% butter; you can also use a butter blend (mix type) or vegetable butter, or even a mild-flavored oil instead of butter
- all-purpose flour – use any flour
What can you substitute for raspberries in the cake?
If you don’t have raspberries at home but want to bake blondies, you can substitute raspberries with practically any fruit. Use small fruits – like blueberries, cherries, currants – whole. For larger fruits – like apples, pears, peaches – cut them into smaller pieces and arrange them on the cake.

How to enhance the flavor of blondie cake?
The cake itself is very basic; I baked it without any flavorings, but you can add grated zest to the dough – e.g., from an orange or lemon. You can add your favorite extract – e.g., vanilla, orange, lemon. If you wish, in addition to raspberries or other fruits, you can sprinkle chopped chocolate, almond flakes, or shredded coconut on top of the cake. This way, you can bake a different version of blondie cake every time :)
How to make icing for blondie cake?
If you want to drizzle the cake with icing, you can, like me, make a small amount of icing from 50g of powdered sugar (about 1/3 cup) and roughly a tablespoon of milk – there won’t be much icing, just enough to make “zigzags” on the cake. If you want to cover the entire cake thoroughly, make a triple batch of icing.

How many calories does blondie cake with raspberries have?
In the table below the recipe, I provided the calorie count for 100g of the baked cake. If you cut the entire cake into approximately 20 similar pieces, each will have about 152 kcal (carbohydrates – 24g, protein – 2g, fats – 5g). The cake with icing made from 50g of powdered sugar will have slightly more calories, about 162 kcal.

How to store raspberry blondies?
Cake with frozen raspberries, once baked and cooled, should be stored in an airtight container with a lid to keep it fresh longer and prevent it from drying out (the cake is naturally on the drier side). At room temperature, it’s best to eat the cake within 3 days (due to the fruit). If the cake is to last longer, it’s better to store it in the refrigerator to prevent the raspberries from spoiling it. The cake can also be frozen for about 3 months.
