How to make cracked lemon cookies step by step
Step 1 – preparing the dough for lemon cookies
- Mix the flour with the baking powder.300 g all-purpose flour, 1 teaspoon baking powder
- Transfer the butter to a larger bowl, add powdered sugar and zest from one lemon.120 g butter, 150 g powdered sugar, lemon zest
- Whisk everything together until fluffy and light.
- Add the egg to the butter mixture and whisk briefly.1 egg

To make such soft-centered lemon cookies at home, you only need a few basic ingredients that you either already have or can easily find in any store – including a local one. Below is a condensed list of the products I used and possible substitutes.
- butter – extra butter with a high fat content (mine is 82%) will be best here; optionally, you can use a butter blend or vegetable butter – but if the cookie dough is too soft, you can add a little more flour.
- lemons – the cookies owe their refreshing lemon flavor to the zest grated from a lemon – I used one large lemon and grated the zest on a fine vegetable grater, and I also added juice squeezed from half a lemon – for me, it was 40 ml. Use about 3 tablespoons – if you add too much juice, the dough may be thinner and stickier – in such a situation, add a little more flour when kneading the dough.
- food coloring – if you want the cookies, in addition to their lemon flavor, to also have a more yellow color, you can add a little yellow food coloring, but it’s not necessary! You can also add a little (about 0.5 teaspoon) turmeric; it will also give a natural yellow color – but don’t overdo the amount, as it will affect the taste of the cookies!

Tips for always successful lemon cookies
For these cracked lemon cookies to turn out well, it is very important to chill the dough. The cookie dough is made with soft butter, and the cookie mass is very soft after preparation. Be sure to chill the dough for an hour in the refrigerator – if you’re in a hurry, you can put the bowl in the freezer for about 30 minutes. After chilling, the dough should be firmer but still pliable enough to form in your hands. Try to form the balls as quickly as possible so as not to warm them up too much in your hands.
The next thing is rolling in sugar – this is thanks to the correct order: first, roll the balls in granulated sugar, and only then in powdered sugar – after baking, the cookies will have a characteristic cracked sugar pattern. You don’t need a lot of this sugar, just enough to cover the surface.

Baking Cracked Lemon Cookies
It’s best to bake one tray of lemon cookies first (I prepared the second batch of cookies while the first ones were baking), and then the second. Also, don’t bake the cookies for too long, as they will dry out and lose their softness inside. The cookies will be soft right after baking, but that doesn’t mean they need to bake longer. If they were the size of a walnut before baking, 12 minutes in the oven is perfectly sufficient.
How many calories do cracked lemon cookies have?

Therefore, I am providing the calorie count for 100 g of cookies here – such 100 g will have approximately 427 kcal (carbohydrates – 65.5 g, proteins – 6 g, fats – 16 g). This is an approximate calorie count; the final value depends on the ingredients you use.

After cooling completely, the lemon cookies are best transferred to an airtight container with a lid to prevent them from drying out. Over time, they will harden slightly, but will still be perfect for eating. This type of cookie is best eaten within a week, but they are also good to eat after that time.
