This cake is a great alternative to various meringues – especially if you are afraid to bake them, or don’t like meringue cakes. This quick cake baked with raisins, nuts and other dried fruits and nuts will be perfect as a sweet dessert. I recommend it.

- 10 egg whites (from L-sized eggs)
- 200 g sugar (1 cup)
- 240 ml oil (or melted and cooled butter)
- 200 g wheat flour – all-purpose (1 and 1/3 cups)
- 100 g nuts (1 cup)
- 50 g raisins (half a cup – you can use other dried fruits)
- 2 teaspoons vanilla extract

- Start whisking the egg whites with a pinch of salt until they are slightly foamy.10 egg whites
- Slowly add the sugar and whisk the mixture at high speed.200 g sugar
- When the egg whites are very thick, white, and glossy, slowly pour in the oil in a thin stream – mix at low speed.240 ml oil
- Add vanilla extract and mix – if you are using vanilla sugar, you can add it along with the regular sugar.2 teaspoons vanilla extract
- Sift the flour through a sieve and add it in portions to the egg whites – gently mix each portion with a spatula.200 g wheat flour – all-purpose
- Finally, add the lightly chopped nuts and raisins – gently mix.100 g nuts, 50 g raisins
- Line the pan with baking paper and transfer the batter – smooth the surface.
- Bake at 180 degrees Celsius (top/bottom heat mode) for approximately 35 minutes – until a dry skewer comes out clean.
- After baking, let it cool and finally sprinkle with powdered sugar.

Dried fruit and nut cake with egg whites – notes
Surely after Fat Thursday and frying donuts and angel wings you have a lot of egg whites left. And now you’re wondering what to do with them. I usually choose to bake meringues, but this year I have so many egg whites that even after baking it, I still had some left. So I delved into the depths of the internet and found this recipe for a dried fruit and nut cake with egg whites. Originally, this cake was baked in two loaf pans. But why would I need two cakes when I prefer to have one?
Instead of dividing it into portions, I put the whole thing into one larger mold and baked it. For this egg white cake with dried fruit and nuts, I used all 10 of my egg whites from large eggs. I was a bit worried if such an amount would fit in my mixer bowl, but luckily it managed. If you have fewer egg whites, divide the recipe in half and bake the cake in a rectangular loaf pan :)

How to bake this dried fruit and nut cake with egg whites?
The most important thing is to beat the egg whites well – like for a meringue. Whisk for a long time and passionately until the egg whites with sugar are very fluffy, thick and white. When I added the flour, I did it without a mixer. I only mixed with a silicone spatula so as not to break down the foam too much. Baking powder is not originally added to this cake, so the structure is provided only by the egg white foam. So try not to lose this foam (if the foam settles significantly, then you can sift 1 teaspoon of baking powder into the dough, it might help). Finally, add lightly chopped nuts – I used hazelnuts because I had them on hand, and dried fruit and nuts. I used raisins because I like them, but I know many of you don’t like raisins in cake. In that case, you can add chopped dried apricots or plums.
