- 5 eggs (L)
- 350 g sugar (1¾ cups)
- grated lemon zest
- approx. 80 ml lemon juice
- 240 ml oil
- 600 g Greek yogurt
- 600 g all-purpose flour (4 cups)
- 3 teaspoons baking powder

- 200 g powdered sugar (1⅓ cups)
- 1 tablespoon lemon juice
- 2-3 tablespoons milk (to consistency)

How to make lemon-yogurt cake step by step
Step 1 – preparations
- Preheat the oven to 180℃ in top/bottom heat mode or 170℃ in convection mode.
- Line the mold with baking paper or grease with butter and sprinkle with breadcrumbs or flour.
- Mix the flour with baking powder.600 g all-purpose flour, 3 teaspoons baking powder
Step 2 – preparing the lemon yogurt cake batter
- In a large bowl, crack the eggs, add sugar and lemon zest.5 eggs, 350 g sugar, grated lemon zest
- Blend together until very thick and fluffy.
- Add lemon juice and blend briefly.approx. 80 ml lemon juice
- Add part of the flour and blend briefly on low speed.
- Add oil and blend until combined.240 ml oil
- Add about half of the remaining flour and blend briefly on low speed.
- Add yogurt and blend briefly.600 g Greek yogurt
- Add the rest of the flour and blend briefly – just until combined.
- You can stop blending when there are still some traces of flour visible and just stir them in with a spoon.
Step 3 – how to bake lemon yogurt cake
- Transfer the batter to the prepared tin.
- Place it in the preheated oven and bake for about 40 minutes – until a skewer comes out clean.
- After baking, cool the cake.
Step 4 – how to make lemon icing for the cake
- Sift the powdered sugar into a bowl, add lemon juice and a tablespoon of milk – start mixing.200 g powdered sugar, 1 tablespoon lemon juice, 2-3 tablespoons milk
- If the mixture hasn’t combined and isn’t slightly liquid, add more milk.
- Spread the icing over the top of the cake.

Lemon cake with yogurt – notes
I really like such simple, uncomplicated, and aromatic cakes for a large baking sheet, which I can easily take on a longer trip and share with my whole family. I baked this lemon cake for our trip to our hometown, where I gifted it to my grandmothers and my sister. The cake is super fluffy, and wonderfully moist. Delicately lemon-flavored – but not dominated by it – because I don’t like those. Add a slightly sweet-and-sour glaze on top, and the perfect summer cake is ready! You must try this recipe and save it for later, because this cake is ideal for all occasions. It will be perfect for Easter, for a garden party, as a sweet treat for a barbecue, but also for a regular afternoon with coffee.

What ingredients are needed to bake a lemon cake for a large baking sheet?
To bake this lemon cake, you will essentially need 5 basic ingredients. Below is a condensed list of the products I used and possible substitutes.
- oil – I used rapeseed oil, but you can also use another mild-flavored oil – e.g., sunflower oil
- Greek yogurt – I used thick yogurt, you can substitute it with natural skyr or thick natural yogurt
- lemon juice and zest – I added zest from a large lemon and its squeezed juice to the cake – I got 80 ml (1/3 cup) of it. If you don’t have a lemon on hand, you can use so-called “lemon concentrate” and omit the lemon zest. In a complete emergency, you can use lemon flavoring, and use regular milk instead of lemon juice.
- wheat flour – any type between 450-550 will be good

Can this cake be made in a different flavor version?
If you’re not a fan of lemon cakes, you can replace the lemon juice and zest with orange. You can also use any favorite cake flavoring, and add milk instead of lemon juice.

How to store lemon-yogurt cake?
After baking and completely cooling, it’s best to cover the cake, wrap it in foil, or transfer it to an airtight container. This will ensure its freshness, fluffiness, and moisture for a long time. You don’t need to put the cake in the refrigerator – it can stay at room temperature for several days.
You can also freeze lemon-yogurt cake for about 3 months.
