- 150 g cooked rice (- 1 cup)
- 225 g wheat flour – all-purpose (- 1.5 cups)
- 1 teaspoon baking powder
- 2 tablespoons sugar (- I used vanilla sugar)
- 1 egg (- I used size L)
- 250 ml milk

How to make pancakes with cooked rice
- Transfer the cooked rice (cooled and preferably day-old) to a bowl.150 g cooked rice
- Add flour with baking powder and sugar – mix to coat the rice and break up any “lumps”.225 g wheat flour – all-purpose, 1 teaspoon baking powder, 2 tablespoons sugar
- Add the egg and milk – mix with a spoon – if the batter seems too thin, you can add more flour.1 egg, 250 ml milk
- Grease a non-stick pan with a little oil. Spoon a tablespoon of batter for each pancake and fry.
- Flip the pancakes to the other side and fry for a moment.
- Before spooning the next batch of pancakes, stir the batter.
- Serve the pancakes with your favorite toppings.

Rice fritters – notes
I recently made cabbage rolls for dinner and cooked way too much rice. I don’t like to waste food, so I wondered how to use it. I asked on my Facebook what to do with such extra rice and a good discussion ensued :)
I received a lot of advice – starting from preparing more cabbage rolls, through various rice salads to baked rice with apples and cinnamon. Thank you very much for all the comments, advice and recipes :)
My daughter used some of the rice as instructed and fried it with spices in a pan, and I decided to use the rest.
And since I like sweet dishes, I was figuring out how to use rice in a sweet way. I didn’t want to make rice with apples, because only I eat it at home, so I went searching the depths of the internet.
And there I found an idea for pancakes with cooked rice!
This recipe immediately interested me and of course I tried it – here I am giving you the recipe with my changes and I encourage you to try it.
If you also have such leftover rice and feel bad throwing it away, then in the spirit of zero waste, prepare rice fritters :)

How to make pancakes with rice – tips
You can make the pancakes themselves in literally 10 minutes, if not less.
Just mix all the ingredients in a bowl with a spoon.
If you want to get gluten-free rice pancakes, replace wheat flour with gluten-free flour. You can use rice flour, but use less of it at first, as it absorbs liquids more. Also use gluten-free baking powder, or use about half a teaspoon of baking soda.
For sweetness and flavor, I added two tablespoons of vanilla sugar to the batter, you can also add a little ground cinnamon. I think cinnamon is good with everything :)
I recommend frying the pancakes on a non-stick pan lightly greased with fat – fry them for about 1-2 minutes, then flip them to the other side and fry for a little longer.
The pancakes are not very fluffy, but rather flatter. If you want them to be fluffier, separate the yolk from the egg white and whisk the egg white until stiff. Then add it to the batter and gently mix.
From this portion, I got 22 rice pancakes, so I think they will be enough for 4 servings.
