This pound cake, baked with ground pistachios, looks beautiful covered with pistachio icing and sprinkled with ground pistachios. You can prepare the pound cake itself even without a mixer – just mix the ingredients with a spoon, pour the batter into a Bundt pan, and it’s ready to bake in the oven. - Large Bundt cake pan with a tube, or an oblong loaf pan about 30 cm long.

- approx 125 g pistachios (shelled, unsalted – 1 cup)
- 375 g all-purpose flour (2½ cups)
- 200 g sugar (1 cup)
- 2.5 teaspoons baking powder
- 2 eggs (size L – at room temperature)
- 300 ml milk (at room temperature)
- 150 ml oil

- 150 g powdered sugar (1 cup)
- 1 teaspoon pistachio cream (or pistachio paste)
- approx. 3 tablespoons milk (to consistency)

How to make pistachio bundt cake step by step
Step 1 – preparations
- Grease the bundt cake pan thoroughly with butter and dust with flour.
- Preheat the oven to 170℃ (fan-assisted) or 180℃ (top/bottom heat mode).
- Blend the pistachios finely – smaller pieces of nuts may remain.approx 125 g pistachios
Step 2 – preparing the pistachio bundt cake batter
- Pour flour into a large bowl, add ground pistachios, sugar, and baking powder – mix with a spoon.375 g all-purpose flour, 200 g sugar, 2.5 teaspoons baking powder
- Crack eggs into a small bowl and whisk with a fork – pour into the bowl with dry ingredients.2 eggs
- Add oil and pour in milk in portions.300 ml milk, 150 ml oil
- Mix everything together with a spoon.
- Transfer the batter to the prepared pan.
Step 3 – baking the pistachio bundt cake
- Place the pan in the preheated oven and bake for about 50 minutes – until a wooden skewer comes out clean.
- After baking, remove the pan from the oven and let it rest for about 5 minutes.
- After this time, carefully transfer the cake to a plate and let it cool completely.
Step 4 – preparing the pistachio glaze
- Pour the powdered sugar into a bowl and add the pistachio cream.150 g powdered sugar, 1 teaspoon pistachio cream
- Gradually pour in the milk and mix until you get a smooth and quite thick glaze.approx. 3 tablespoons milk
- Spread the glaze over the top of the bundt cake.
- Finally, you can sprinkle the bundt cake with a little chopped pistachios.

Fluffy Pistachio Pound Cake – notes.
Easter holidays are slowly approaching, and my pound cake today will be a perfect choice for a sweet holiday table. Firstly – because it’s a pound cake (of course ;)), and secondly, because it’s in a spring green color. It might not be the typical vibrant green of fresh grass and young leaves, but it’s still green ;) What’s more, you can prepare this pound cake even without a mixer – just mix the ingredients with a spoon! And for such a pound cake, I recommend adding homemade pistachio liqueur – it will be a perfect duo!

What ingredients are essential for baking a pistachio pound cake?
To bake this bundt cake, you will need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.
- pistachios – you need shelled and preferably unsalted pistachios here. I bought mine at Lidl – they have unsalted, shelled pistachios in 70g packs – you can take two packs and use some of them to sprinkle on top of the cake. You can also buy a 250g pack of pistachios in shells – I saw someone weigh them after shelling, and it comes out to about 130-150g – so that will also be a good amount, but you’ll have to put in a bit of effort with the shells. If you have salted pistachios, rinse off some of the salt before use and dry them before grinding.
- milk – I used 1.5% UHT milk, you can use any milk – including plant-based milk.
- oil – I used rapeseed oil, you can also use another oil – but use one with a mild flavor.
- pistachio cream – I added cream from Biedronka (Gusto Bello), you can use any cream, and if you don’t have it, make the glaze without it, the bundt cake with regular glaze will also be delicious :)
- all-purpose flour – use your favouriet flour – you can also try light spelt flour.

How to grind pistachios?
I ground my pistachios in a food processor – some were finely ground – almost to a flour, but there were also quite a few slightly larger pieces of pistachios, which later gave a nice crunch in the bundt cake. If you don’t have a food processor but have a coffee grinder, you can grind the nuts in it. You can also chop them very thoroughly with a knife and additionally crush them in a mortar and pestle.


How to store pistachio bundt cake?
To keep the pistachio bundt cake fresh and fluffy for a long time, it’s worth covering it with a cake dome or storing it in a container with a lid. Under these conditions, the cake can last for up to a week and will still be delicious. You can also freeze the cake for about 3 months.
