Ingredients for the raspberry layer
- 250 g raspberries
- 2 packages raspberry jelly
- 500 ml water (boiling)
ingredients for the chocolate-coffee layer
- 500 g mascarpone cheese
- 150 g dark chocolate (or semi-sweet)
- 100 g chocolate-nut spread (e.g., Nutella)
- 3 tablespoons instant coffee (powder)
ingredients for the cream layer
- 250 g mascarpone cheese (well-chilled)
- 250 ml heavy cream (well-chilled)
- approx. 50 g powdered sugar (2-3 tablespoons – to taste)
additional ingredients
- approx. 125 g cocoa biscuits
- chocolate sprinkles (or grated chocolate)

How to make raspberry coffee cake step by step
Step 1 – preparations
- Dissolve the jellies in hot water and add raspberries to them.250 g raspberries, 2 packages raspberry jelly, 500 ml water
- Blend or mix the jelly with raspberries together until the fruits break down.
- Set aside until the jelly begins to slightly set.
- Line the mold with baking paper or aluminum foil.
- Arrange a layer of biscuits on the bottom.approx. 125 g cocoa biscuits
- Pour the setting raspberries over the biscuits and spread in an even layer.
- Place the mold in the refrigerator until the jelly is completely set.
Step 2 – preparing the chocolate-coffee layer
- Break the chocolate into pieces and melt it in a double boiler – leave the melted chocolate to cool for about a dozen minutes.150 g dark chocolate
- Transfer the mascarpone cheese to a bowl and briefly mix with Nutella.500 g mascarpone cheese, 100 g chocolate-nut spread
- Add powdered coffee to it and blend until combined.3 tablespoons instant coffee
- Add cooled chocolate to the mascarpone and blend together into a smooth cream.
- Spread the cream over the raspberry layer and level it.
Step 3 – preparing the cream layer
- Transfer the mascarpone cheese to a larger bowl, add the heavy cream and powdered sugar – blend on high speed with a mixer until you get a thick cream.250 g mascarpone cheese, 250 ml heavy cream, approx. 50 g powdered sugar
- Spread the cream over the coffee layer and level it.
- Chill the cake in the refrigerator for several hours.
- Before serving, decorate the cake with grated chocolate or chocolate sprinkles.chocolate sprinkles

Raspberry-Coffee Cake notes
I prepared today’s cake for my family for Easter, but only now did I have time to prepare the detailed recipe here on the blog. And the cake is so delicious that it would be a shame for it to be forgotten :) Because you can make this cake without baking, it will be great for warm days. And its wonderful appearance and delicious taste make this cake perfect for special occasions – various family celebrations, events, and holidays. What ingredients are needed to make raspberry coffee cake?
To make this cake, you will need a few basic ingredients. Below is a condensed list of products and possible substitutes.
- raspberries – you can use both fresh and frozen fruit – I used frozen raspberries. You don’t need to thaw such frozen raspberries beforehand, which will make the jelly cool down and set faster.
- mascarpone – this is a creamy Italian cheese, you can easily find it in every Lidl, Biedronka, and larger supermarkets.
- heavy cream – I used UHT 30% cream in a carton, you can also use 36% cream.
- chocolate – I prefer less sweet cakes, so I used dark chocolate. If you prefer sweeter cakes, you can slightly sweeten the chocolate-coffee cream with powdered sugar, or you can also swap dark chocolate for milk chocolate.
- instant coffee – powdered coffee will be better here than granulated because it’s easier to blend, but granulated should also work. If children are going to eat the cake and you don’t want to use coffee, you can omit it entirely or substitute it with grain coffee – like Inka.

How to store raspberry-coffee cake?
The cake is best stored in the refrigerator – due to the creams, but it can also safely stay out for a few hours if it’s not too hot. After preparation, it’s worth chilling the cake for several hours so that the layers set well and the biscuits at the bottom of the cake soften and are easier to cut.

How many calories does raspberry coffee cake have?
In the table below the recipe, I provided the calorie count for 100 g of cake. If you divide the cake into approximately 20 equal portions, each slice will have about 302 kcal (carbohydrates – 19 g, fats – 24 g, proteins – 3 g). So, for a creamy cake, I think this is a very decent calorie count, and everyone can enjoy a slice without guilt :)
