Erythritol – recipes for everyone!
Erythritol is a natural sugar alcohol sweetener that is a derivative of sugar.
It is also known as sugar alcohol or polyol.
Erythritol occurs naturally in some fruits and fermented foods, but is also produced industrially by glucose fermentation.
Erythritol has about 70% of the sweetness of sugar, but contains no calories and does not affect blood sugar levels, making it a popular ingredient in food products for people on low-carb diets or diabetics.
Erythritol has a slightly cooling taste and is used in food products, such as sweets, beverages, chewing gum, and also in baked goods, as a sugar substitute.
Because erythritol is natural and does not cause a significant increase in blood sugar levels, it is considered a safe and healthy sugar substitute.
I use it in my sweet baked goods when I want to reduce their calorie content.
Unfortunately, erythritol is much more expensive than sugar, which is why I only use it in selected baked goods.
