Bake with me today a sensational and very simple blackcurrant cake with streusel. I prepared this creamed cake with buttermilk and added a lot of blackcurrant jam and a lightly cinnamon streusel. Thanks to this, the cake tastes delicious and stays fresh for a long time. Such a cake with blackcurrants will be perfect for a weekend coffee, but also for special occasions. The cake stores very well and handles transport excellently. Be sure to try this recipe and save it for later!

- 200 g sugar (1 cup)
- vanilla extract (optional)
- 450 g all-purpose flour (3 cups)
- 2.5 teaspoons baking powder
- 300 ml buttermilk (preferably at room temperature)
- 200 ml oil
- approx 300 g blackcurrant jam

- 100 g butter
- 150 g all-purpose wheat flour (1 cup)
- 70 g sugar (1/3 cup)
- 0.5 teaspoon cinnamon (optional)

How to make blackcurrant cake step by step
Step 1 – preparations
- Line the baking pan with parchment paper or grease it with butter and sprinkle with flour or breadcrumbs.
- Preheat the oven to 170 ℃ (fan-assisted) or 180 ℃ (top/bottom heat mode).
Step 2 – preparing the buttermilk batter
- Transfer the eggs and sugar to a bowl – you can also add a little vanilla extract if you like.4 eggs, 200 g sugar, vanilla extract
- Beat the eggs and sugar together into a thick and fluffy mixture – I beat for several minutes on the highest speed of the mixer.
- Mix the wheat flour with baking powder.450 g all-purpose flour, 2.5 teaspoons baking powder
- Add the flour in portions to the beaten eggs, mixing only on low speed of the mixer.
- Add the flour alternately with buttermilk.300 ml buttermilk
- Add oil and mix briefly – just until combined.200 ml oil
Step 3 – placing the dough into the pan

- Sprinkle the streusel over the top of the cake.
Step 5 – baking the blackcurrant cake
- Place the pan with the cake into the preheated oven and bake for about 40-50 minutes – until a skewer inserted comes out clean.
- You can serve the cake after it has slightly cooled.

Blackcurrant buttermilk cake – notes
We recently went on our winter holiday and I needed a cake that, firstly, would travel well, secondly, would stay fresh for a long time and not spoil quickly, and thirdly, would be slightly moist and preferably with a fruity element. This is how I baked this delicious buttermilk cake with blackcurrant jam and a lightly cinnamon streusel. The cake turned out so delicious that it only lasted until the 3rd day of our holiday! That’s the best review for me – you have to bake this cake too!

What ingredients are essential for preparing blackcurrant cake?
To bake this cake, you will only need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.
- buttermilk – of course, it’s natural buttermilk; you can replace it with kefir or natural yogurt of a thinner consistency
- blackcurrant preserve – you can also use blackcurrant fruit spread; I don’t recommend store-bought jams because they usually contain gelatin or another gelling agent and can melt significantly under heat
- oil – I used rapeseed oil, but you can use another mild-flavored oil, or you can use melted and cooled butter
- wheat flour – you can use all-purpose flour

Can this cake be made in a different flavor version?
Of course, you can replace the blackcurrant preserve with a preserve of a different flavor. And if you don’t have preserve, you can top the cake with small fruits – e.g., forest fruits, raspberries, blueberries, or sliced strawberries. For flavor, you can add a little lemon extract, or lemon juice or zest, to the cake instead of vanilla.

How many calories does blackcurrant and crumble cake have?
In the table below the recipe, I provided the calorie count for 100g of cake (using the products I used), but if you divide the cake into approximately 24 equal portions, each will have about 272 kcal (carbohydrates 31g, fats 14g, proteins 5g).

How to store blackcurrant cake?
After the blackcurrant cake has completely cooled, it’s worth transferring it to an airtight container with a lid; this will help it retain freshness and softness for a long time. If it’s not very hot, you don’t need to put the cake in the refrigerator. It can safely stay at room temperature for several days.
You can also freeze the cake for about 3 months.
