How to make a blueberry galette tart step by step
Step 1 – preliminary preparations
- Take the egg out of the fridge in advance, crack it into a bowl and mix thoroughly with a fork. Set aside to warm to room temperature.50 g egg
- Take the butter out of the fridge and leave it to warm to room temperature and soften.120 g butter
Step 2 – preparing the shortcrust pastry
- Transfer the soft butter and powdered sugar to a bowl and mix thoroughly with a spatula until you get a smooth and uniform mass.80 g powdered sugar, 120 g butter
- If you have a kitchen scale, weigh out 50 g of the beaten egg and add it to the butter mixture.
- Mix thoroughly with a spatula until you get a smooth and uniform mass.
- Add the flour and ground almonds and combine briefly – until a smooth dough is formed.210 g wheat flour – all-purpose, 30 g ground almonds
- Wrap the dough in cling film and refrigerate for about an hour.
Step 3 – preparing the blueberry mixture
- Wash the blueberries and pat them dry lightly.approx 300 g blueberries

- Place the crumble topping ingredients in a bowl and crumble with your fingers or a fork into a lumpy mixture.50 g butter, 50 g wheat flour – all-purpose, 25 g ground almonds, 50 g sugar
Step 5 – preparing the galette tart
- Turn on the oven to 200℃ (top/bottom heat mode).
- Take the chilled dough out of the fridge, place it between two pieces of baking paper and roll it out into a thin disc about 0.5 cm thick.
- Place the paper with the dough on a large baking sheet from the oven (remove the top paper).
- Spread the blueberry filling onto the center of the dough – gently spread it over the dough, leaving a margin of about 3-4 cm at the edges.
- Gently fold the clean dough at the edges over the blueberries, creating a border.
- Finally, sprinkle the prepared crumble topping over the dough.
Step 6 – baking blueberry tart
- Place the baking sheet with the tart into the hot oven and bake for about 30-35 minutes.
- After baking, gently cool the tart and serve it still warm – e.g., with ice cream :)

Today I invite you to try a super simple and exceptionally delicious shortcrust tart with blueberries with a delicate almond flavor. With this recipe, I tested a new recipe and a new way of preparing shortcrust pastry for a tart. I saw this recipe on TikTok from Bake it with Mel and I must admit that the dough turns out very nice and is easy to work with. However, it requires precision in measuring ingredients, and it’s best to do it using a scale, not cups. The baked cake is delicious and stays fresh for a long time – I even took it on vacation, and it survived 1600 km in the car in the heat! That’s why it’s worth saving for later!

What ingredients are essential for baking the tart?
To make such a rustic tart at home, you will only need a few basic ingredients that are readily available. Below is a condensed list of the products I used and possible substitutes.
- butter – I used extra 82% butter, you can also ultimately use a butter mix or vegetable butter, remember that the butter should be soft, so take it out of the fridge at least two hours in advance
- almonds – I added ground almonds (almond flour) to both the dough and the crumble; you can grind almonds yourself for this – I recommend grinding almond flakes, as you’ll grind them in a second; if you don’t have almonds, add more wheat flour instead
- potato flour – you can also use potato starch or another starch – its purpose is to thicken the juice produced from the fruits during baking; if you don’t have starch, add, for example, a tablespoon of jelly powder or regular wheat flour
Can galette be prepared with other fruits?
Of course! Instead of blueberries, other small seasonal fruits such as raspberries, blackberries, strawberries, plums, apricots, peaches, nectarines, or a mix of seasonal fruits will work great. Larger fruits should be cut into smaller pieces beforehand.
