- 50 g sugar (¼ cup)
- 50 g all-purpose flour (⅓ cup)

- 120 ml milk
- 50 g sugar (¼ cup)
- 1 tablespoon vanilla sugar
- 200 g whole milk powder (2 cups)

- 1 liter water (boiling)

How to make milk cream cake step by step
Step 1 – preparations
- Line the baking pan with parchment paper.
- Preheat the oven to 180℃ in top/bottom heat mode.
- Sift both flours for the sponge cake through a sieve.50 g all-purpose flour, 1 tablespoon potatoe starch
- Prepare the jellies – dissolve them in boiling water and set aside to cool and slightly thicken.2 packets strawberry gelatin, 1 liter water
- Wash the strawberries, remove the stems, and cut the fruit into smaller pieces.approx. 500 g strawberries
Step 2 – preparing the sponge cake
- Beat the egg whites together with sugar.2 egg whites, 50 g sugar
- Beat until the egg whites become white and thick.
- Then add the egg yolks and briefly and gently combine on low speed with a mixer, or mix with a spoon.2 egg yolks
- Add the sifted flours and gently mix.
- Transfer the dough to the mold and spread it in an even layer.
- Bake the sponge cake for about 12 minutes – until a dry stick. After baking, cool it well.
Step 3 – preparing the milk cream
- Pour the milk into a saucepan, add sugar and vanilla sugar – bring to a boil until the sugar dissolves. Leave to cool to room temperature.120 ml milk, 50 g sugar, 1 tablespoon vanilla sugar
- Transfer the soft butter to a mixer bowl and beat on high speed.200 g butter
- Beat for a few minutes until the butter becomes fluffy and light in color.
- Then, start adding the cooled milk with sugar and powdered milk alternately, a little at a time.200 g whole milk powder
- Once all the milk has been added, finally mix the entire cream with a spatula.
Step 4 – Assembling the cake
- If you like moist sponge cakes, you can now additionally soak the sponge cake – e.g., with slightly sweetened water with lemon juice.
- Spread the milk cream over the sponge cake in the mold and spread it in an even layer.
- Place the strawberries on the cream and gently press them into the cream.
- Pour the setting jelly over the strawberries.
- Chill the cake in the refrigerator for about 2 hours, until the jelly is completely set.
- Remove the cake from the refrigerator about half an hour before serving, so that the cream can warm up slightly and soften.

Sponge cake with strawberries and cream – notes
Using the still-available strawberries (although their price this year is truly shocking), I prepared such a simple, yet delicious, summer cake for my family. The base here is a simple, fluffy sponge cake (which you can also replace with ladyfingers if you don’t feel like baking). Added to that is a tasty buttercream with powdered milk and a large amount of fresh strawberries set in a thick layer of strawberry jelly. The cake looks beautiful, and you can prepare it in a large baking tin, so it’s easy to divide into many portions. You must try it!

What ingredients are needed to prepare a powdered milk cake?
To prepare this milk cake, you will need a few basic ingredients, all of which you can find in any large supermarket or even in Biedronka. Below is a shortened list of the products I used and possible substitutes.
- powdered milk – You need full-fat powdered milk here — it cannot be granulated milk!
- butter – Extra butter with 82% fat content will be best; remember to take it out of the fridge about 2 hours earlier so it warms up and softens.
- milk – I use 1.5% UHT milk, but you can also use milk with a different fat content.
- strawberries – Fresh fruit is best; frozen won’t be as tasty, but if you have no choice, you can also use frozen ones, but before placing them on the cake, first thaw them on a sieve so that the excess liquid can drain off.

Can this cake be made with other fruits?
Of course, if you don’t have strawberries or you’re not a fan of them, you can use other currently available fruits. Out of season, you can also use canned fruit — such as peaches. Just match the flavor of the jelly to the fruit.

How to store the milk cream cake?
Due to the jelly and fruit, the cake is best kept in the refrigerator. The butter-based cream will harden after chilling, so take the cake out of the fridge beforehand — about half an hour to an hour before serving — so that the cream warms up and softens. The cake can also sit out for a few hours (as long as it’s not in the heat or direct sunlight).
