- 200 g sugar (1 cup – or to taste)
- 1 tablespoon vanilla sugar
- approx 40 g vanilla pudding (powder)
- 120 ml Greek yogurt (optional – see notes below the recipe)

- 100 g butter
- 150 g all-purpose flour (1 cup)
- 60 g sugar (1/3 cup)

How to make cheesecake with crumble step by step
Step 1 – preparations
- Preheat the oven to 150℃ in top/bottom heat mode.
- Line the baking pan with parchment paper, or grease it with butter and sprinkle with flour or breadcrumbs.
Step 2 – preparing the shortcrust pastry for the cheesecake base
- Place all ingredients for the dough in a bowl – cut the butter into smaller pieces.250 g all-purpose flour, 150 g butter, 50 g sugar, 1 egg
- Mix or briefly knead the dough, so that it still retains a crumble form – it should be lumpy.
- Transfer the dough to the prepared pan and press it into an even layer across the bottom.
- Place the pan with the dough in the refrigerator while preparing the cheesecake.
Step 3 – preparing the vanilla cheesecake
- Transfer the cream cheese into a large bowl, add eggs, both sugars, and pudding powder – blend briefly on low speed of the mixer – just until the ingredients are combined.1 kg cream cheese for cheesecakes, 4 eggs, 200 g sugar, 1 tablespoon vanilla sugar, approx 40 g vanilla pudding
- Add yogurt and blend briefly.120 ml Greek yogurt
- Pour the cheesecake mixture onto the chilled base.
Step 4 – preparing the crumble for the cheesecake
- Briefly blend or combine all ingredients for the crumble. The mixture should be lumpy and slightly crumbly.100 g butter, 150 g all-purpose flour, 60 g sugar
- Sprinkle the top of the cheesecake with crumble.
Step 5 – baking the cheesecake with crumble
- Place the pan with the cake into the oven and bake for about an hour and 30-40 minutes.
- After baking, cool the cheesecake.
- You can additionally put it in the refrigerator to chill.

Cheesecake with streusel for a large baking sheet – notes
I baked this cheesecake for a special occasion. This year – after a year-long break from running (due to my injury) – I ran with my husband in a mountain ultramarathon – SGS – Supermaraton Gór Stołowych over a distance of 55 km. My husband, two of our friends, and I participated in the race. So I baked us a large sheet pan of cheesecake with streusel on top. It’s well-known that carbohydrates and proteins are the best nutrients for an ultra-runner – especially when the race is in the mountains and additionally requires a lot of uphill climbing. The cheesecake tasted wonderful and gave us all great energy. But such a cheesecake will be excellent not only for races but also as a cake for a barbecue, a holiday cake, or simply as a dessert with everyday coffee. Be sure to try it!

What ingredients are needed to bake a cheesecake with streusel?
To bake this cheesecake, you will only need a total of six basic ingredients, which you either already have at home or can easily get in any store. Below is a list of the products I used and possible substitutes.
- cream cheese – I used cheesecake quark from a bucket; my cheesecake had 124 kcal per 100g and was relatively dense
- Greek yogurt – I added half a glass of thick yogurt to the cheesecake; you can substitute it with plain natural yogurt – but choose a thick one. If you have runny quark cheese for cheesecakes, you can omit the yogurt entirely.
- butter – for the crumbly cheesecake base and the crumble topping, you will need a total of 250g of butter. I used 82% extra butter here, but you can optionally substitute it with a butter mix or even vegetable butter.
- sugar – in total, you will need 310g of sugar for the entire cheesecake.
- pudding powder – to give the cheesecake a slightly vanilla flavor, I used vanilla pudding powder, but if you don’t have it, you can use cream-flavored pudding powder. In that case, you can add a touch of vanilla extract to enhance the cheesecake’s flavor.

How to make cheesecake with crumble topping and raspberries?
Do you fancy cheesecake with raspberries, or perhaps cheesecake with peaches and crumble topping? You can add any fruit to this cheesecake – raspberries, apples, peaches, cherries, or even pineapple. Just remember that the cheesecake batter is best made with good, fatty quark cheese – e.g., Piątnica or Mój Ulubiony. With runnier quark cheeses, be sure to omit the Greek yogurt! If the cheesecake batter is too thin, it will not support the weight of the fruit and crumble topping, and they may sink to the bottom of the cheesecake during baking!
Therefore, do not overdo it with the amount of fruit added, so as not to heavily weigh down the cheesecake. If you are unsure whether the batter will hold the fruit, you can mix them into the cheesecake and just place the crumble topping on top.

How to make cheesecake with crumble topping and vanilla glaze?
Do you prefer sweet cheesecakes and want to additionally drizzle your vanilla cheesecake with glaze? No problem! Prepare a quick homemade glaze and pour it over your cheesecake. For such a glaze, you will need the following ingredients:
- about a glass of powdered sugar
- a teaspoon of vanilla sugar, or a few drops of vanilla extract
- about 3 tablespoons of milk
Mix the powdered sugar with vanilla sugar and milk, adding one tablespoon at a time – mix until the sugar dissolves and becomes slightly liquid. Then pour it over the top of the cheesecake.

How to store cheesecake on a shortcrust base?
Cheesecake on a shortcrust base is best stored in the refrigerator. It can last there for several days. You can also freeze this cheesecake for about 3 months.
