Ingredients for poppy seed cake with egg whites
- 125 ml oil
- 1 cup all-purpose flour (150 g)
- 1 cup sugar (200 g)
- 1 cup poppy seeds ((unmilled) 150 g)
- 1 cup egg whites ((approx. 7 pcs.) 250 g)
- 1 teaspoon vanilla sugar
- 1 teaspoon any extract (- I recommend almond or orange)
- 1 teaspoon baking powder

How to make poppy seed cake with egg whites step by step
Step 1 – preparations
- Preheat the oven to 200℃ (top/bottom heating mode) or 190℃ (convection mode).
- Grease the baking pan with butter and dust with flour, or line it with baking paper.
- Mix together the flour, baking powder, and poppy seeds.1 cup all-purpose flour, 1 cup poppy seeds, 1 teaspoon baking powder
Step 2 – preparing the batter
- Pour the egg whites into a larger bowl, add sugar and vanilla sugar.1 cup sugar, 1 cup egg whites, 1 teaspoon vanilla sugar
- Whisk them together on high speed with a mixer until a stiff, smooth mixture forms.
- Gradually add the mixed flour with poppy seeds to the egg white mixture.
- Add extract (if using) and oil.1 teaspoon any extract, 125 ml oil
- Pour the batter into the prepared pan.
Step 3 – baking the poppy seed cake
- Place the mold in the preheated oven and bake for about 30 minutes – until a dry skewer comes out.
- After baking, let it cool.

Why bake this poppy seed cake?
Because I’ve been making a lot of ice cream lately, I keep accumulating leftover egg whites. Recently, while browsing kotlet tv, I found a recipe for poppy seed cake baked with egg whites :) I love poppy seed cakes, so I was happy to “kill two birds with one stone” – get rid of the egg whites lingering in the fridge and enjoy a poppy seed cake at the same time :)
This is a great cake that fits the “zero waste” philosophy. It’s especially useful after Fat Thursday (but not only then) when you have leftover egg whites from frying doughnuts and don’t know what to do with them. I usually use such egg whites to bake meringue, but I don’t always feel like it. That’s when this recipe for piegusek with poppy seeds comes to my aid. Recently, I used the recipe again and took new photos and made a video for it. The old ones (you can see them at the very bottom) no longer did justice to this cake and didn’t encourage trying it ;) I hope these new photos will effectively encourage you to try the recipe, because it’s worth it!

What ingredients are needed to bake a poppy seed cake with egg whites?
To make this cake, you only need a few very basic ingredients. Below is a condensed list of the products I used and possible substitutes.
- egg whites – you will need a cup of egg whites – for me, that was roughly 6.5 egg whites from large eggs
- oil – this time I baked the cake with rapeseed oil, but originally the cake is prepared with melted and cooled butter, it’s up to you what you choose
- flour – use wheat flour – all-purpose will be good
- poppy seeds – for this recipe, you need whole poppy seeds! Do not use ground poppy seeds, as they will significantly alter the cake’s consistency and turn it almost completely black.

How to make a speckled cake (piegusek) successfully?
This recipe is very simple and follows essentially one rule – the “cup” rule. If you don’t have a scale, no problem. Measure all ingredients with the same or a similar cup. Use one cup each of egg whites, flour, sugar, and poppy seeds. Add half a cup of oil. If you maintain these proportions, the cake should turn out perfect!
How to serve egg white and poppy seed cake?
After baking and cooling, you can simply dust the cake with powdered sugar (especially if you don’t want to increase its calorie count). You can also, like me, spread it with icing – I mixed 100g of powdered sugar with about 2 tablespoons of milk. I spread it over the cake and finally sprinkled it with chopped almonds and whole poppy seeds. You can also make a chocolate glaze – just heat 50 ml of heavy cream, add 100g of chopped milk chocolate, mix, cool, and pour over the cake. Delicious!

How to store poppy seed bundt cake with egg whites?
After cooling, transfer the poppy seed cake to an airtight container with a lid, or cover it with a cake dome to prevent it from drying out. This will keep it fresh for a long time. You don’t need to put the cake in the refrigerator. It can safely stay at room temperature. You can also freeze the cake for about 3 months.
